I just came across this and thought it looked yummy! If anyone tries it before me, please post a review.

I would probably skip the nuts, skip chopping the blueberries, use light cream cheese, and use more lemon zest. I just can't make a recipe without changing it! http://www.cookinglight.com/bbs/biggrin.gif

Blueberry-Lemon Cheesecake Bars

Blueberry Filling:
1 cup blueberries, chopped
1/4 cup orange juice
2 tablespoons sugar
2 teaspoons cornstarch

Crumb Mixture:
1 1/4 cups all-purpose flour
3/4 cup old fashioned or quick-cooking oats
3/4 cup firmly packed brown sugar
1/2 cup chopped nuts
1/2 cup butter

Cream Cheese Filling:
1 (8-ounce) package cream cheese, softened
2 eggs
1/2 cup sugar
2 tablespoons fresh lemon juice
1 teaspoon grated lemon peel

Preheat oven to 350*F (175*C).

Lightly grease the bottom of a 13 x 9 x 2-inch pan. Set aside.

In a small saucepan combine blueberry filling ingredients; stir until corn starch is dissolved. Cook over medium heat, stirring constantly until thick and bubbly, about 5 minutes. Set aside to cool slightly.

In a large bowl, combine all crumb mixture ingredients except butter; mix well. Using a pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Reserve 1 cup crumb mixture for topping. Press remaining crumb mixture firmly in bottom of prepared baking pan. Bake for 10 minutes.

In a medium bowl mix together the cream cheese filling ingredients with electric mixer on medium speed until well blended; pour into baked crust.

Spoon blueberry filling over cream cheese filling, swirl with knife to marbleize.

Sprinkle reserved crumb mixture over filling.

Bake 20 to 25 minutes or until lightly browned. Cool completely. Cut into bars.

Makes about 36 bars.

Thanks for sharing, this does look good. I was reading it thinking that raspberies or strawberries done like the blueberries and used for the stripes in the flag and a small amount of blueblerries put in for the star area of the flag would be fun for the Fourth!

I have not tried that recipe, but I sure will now. I wonder if they want the blueberries chopped so that more juice would come out. I think I would just squish them a bit, rather than chop them. It's not like they are big and we'd choke on them (at least where I buy my berries they are not that big http://www.cookinglight.com/bbs/smile.gif )

That sounds like a good idea sneezles. If anyone tries this, I hope it turns out well for you. I'm always a little hesitant to post recipes I've never tried before. But with cream cheese, blueberries, and lemons how could it possibly be bad?! http://www.cookinglight.com/bbs/biggrin.gif

Just wanted to report that I made these yesterday and they are yummy - the blueberry filling stuff really makes them. Of course I had a few changes...
I halved the recipe and used an 8 inch square pan. I put all the crumb mixture on the bottom for the crust since I wanted to bring them to work and thought the topping might fall off and be messy. However, next time I'd use the topping because it was a wee bit too thick of a crust. I also cut down the butter by about half.
Of course I subbed fat free cream cheese and egg substitute and I also omitted the nuts.
But, thumbs up overall, thanks Linda for the recipe!

I made these today and give them two thumbs up (me and my husband).
I only changed the recipe a wee bit. Of course I did not chop the blueberries that seemed silly. I used neuchatel (light cream cheese). I used more lemon then called for I used all the juice and zest from one large juicy lemon.
Thanks for posting this. I will be making this recipe again.

Glad they turned out well for you and your husband, maizeyoats. I can't wait to try them now! Maybe for the 4th of July.
