DH has left for France and as easy as it would be so to pine away and subsist on a diet of Kashi Go Lean and cheese during the six (now five!) weeks I am alone, I am determined to continue cooking and soothe my loneliness with culinary creativity!

To that end, I finally had a chance to dive into the July issue and my newly-acquired CL Complete.

From July '01: Chile-Vinegar Turnip Greens and Black-Eyed Pea Salad with Sour Cream Dressing

WOWZA! The turnip greens (actually, mustard greens as I couldn't locate any turnip greens) were such an explosion of taste. I used Lee Kum Kee Chile Garlic Sauce. The greens were wonderfully spicy- such a different taste and texture- not exactly Asian, not exactly Southern, but so alive and interesting in flavor and texture. I had these over sweet brown rice.

It was a perfect combination with the Black-Eyed Pea Salad, which was cool and sweet. I don't normally care for raw onions, but I caught myself eating from the bowl, this was so good. Safeway advertised the Walla Walla Sweets as onions you could eat like an apple, which gave me the willies, but now....Yum!

From CL Complete:

Grilled Salmon with Ginger-Orange Mustard GlazeThis was really fantastic- sweet and spicy. So many flavors happening here- the bite of ginger, the sweet honey and cream sherry, tang of fresh orange juice.

I am so surprised to say that I would make all of these again- I didn't have high expectations starting out, but the flavors in each were so intense and pleasing.

A Columbia Crest Semillon-Chardonnay was refreshing with such intense flavors and a great balance of spare Semillon and denser, oaky Chardonnay that brought out the spices.

Another great accompaniment was Satch Plays Fats: A Tribute to the Immortal Fats Waller by Louis Armstrong - a Southern thing going on... http://www.cookinglight.com/bbs/smile.gif

Now, I am left with the dishes and leftovers. Oh, I miss DH so much!!

We have had the Chile-Vinegar Turnip Greens and the Black-Eyed Pea Salad and both went over well with my family, from the oldest to the youngest.

Could someone post the black eyed pea recipe?
It sounds good! I know I have sour cream at home but I'll need to pick up the peas on my way home.

Gladly, Kelli. Here 'tis:

Black-Eyed Pea Salad with Sour Cream Dressing

1/2 cup fat-free sour cream
1/3 cup white wine vinegar
2 tablespoons sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup thinly sliced Vidalia or other sweet onion
1 cup thinly sliced cucumber
1 cup julienne-cut red bell pepper
1 (15.8-ounce) can black-eyed peas, rinsed and drained

1. Combine first 5 ingredients in a medium bowl; stir with a whisk.
2. Add remaining ingredients, tossing to coat. Cover and chill 3 hours. Yield: 4 servings (serving size: 1 cup)

CALORIES 115; PROTEIN 6.3g; CARB 20.6g; FIBER: 1.9g; CHOL 0mg; IRON 1 mg; SODIUM 377 mg; CALC 63 mg

Thanks for the great reviews! I made the black-eyed pea salad, added cooked seashell pasta and called it a main dish. Delicious!

I have to say the salmon recipe you mentioned has always been my favorite over all the others that people try. It is so simple as well. I tried the maple mustard salmon the other day as I was out of fresh ginger and definitely like the one you tried better. I was surprised that it was not in the recipe finder. It is from Oct 96 I think if anyone without Mastercook or CL complete is looking for it.

Grilled Salmon with Ginger-Orange Mustard Glaze

Recipe By :Cooking Light
Serving Size : 0 Preparation Time :0:00
Categories : Fish, For the Grill, Low-Fat

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup fresh orange juice
1/4 cup soy sauce
1/4 cup cream sherry
1/4 cup Dijon mustard
2 T grated peeled fresh ginger
2 T honey
4 salmon fillets (about 1 inch thick) -- (6-oz)
cooking spray
green onions and lemon slices (optional)

1. Combine first 6 ingredients in a large zip-lock bag. Add fish to bag; seal and marinate in refrigerator for 30 minutes. Remove fish from bag; reserve marinade.

2. Prepare grill or broiler.

3. Place fish on grill rack or broiler pan coated with cooking spray. Cook 5 minutes on each side until fish flakes easily when tested with a fork, basting frequently with reserved marinade.

4. Place remaining marinade in a saucepan; bring to a boil. Serve with fish; garnish with green onions and lemon slices, if desired. Yield: 4 servings

How can this recipe have this much fat ? There is no oil in this recipe. Is it the cream sherry ? What is this, I am not familar with this product ? What would be a subsitute.:rolleyes:

Actually, I'm guessing the bulk of the fat is from the salmon. Salmon is a pretty fatty fish, although it's heart-healthy fat (omega-3 fatty acids).

KValley -- even though the flavor was good, were the greens kind of like typical greens? DH has an aversion to anything that tastes like "grass" (his words, of course), so I always try to find new and creative recipes that might change his mind. (I'm proud to say that he now likes spinach in both his pasta sauce and on pizzas! yea!) Do you think this recipe could win him over??

OKay- Whoa funky new format!! And what's with the crazy time zone? I think the CL staff has run off to Europe, 'cause they are definitely NOT on Central Time.. Hee hee

Susan- if DH likes spinach, try this recipe with that wonderful green.:cool:

Oh, I get it- see little note at bottom- Greenwich Mean Time. I hate that! I don't like to calculate everyone's time zones based on GMT...it's much easier to add two or three hours then nine. Mathematically challenged, I know. Leave me alone!

I got a kick out of the time zone too. It's funcky with the new board. Feel as though I'm in a different place but with familiar CL friends so it's not as strange as it could be.:confused:

If you edit your prefrences, you can change the time to your own time zone.

I edited my time, but it still is showing it wrong. Oh well, guess I shouldn't let it bother me.:rolleyes:

For a moment there, I thought it would be fun to use the local time in Tashkent, New Caledonia, or Nairobi. Just for a moment....

Well, it's still incorrect. It should be GMT-9...Ah well, I guess I can cope with being on Mountain Time instead of Pacific
