I want to start preplanning meals (make ahead a bunch, then freeze & thaw as needed),
but most of what I know are the obvious, chili, lasagna, etc. I also want some less 'heavy' meals, most of what I have seems more suited for fall/winter. Most of the recipes I see in the magazine have fresh veggies that don't look as if they would freeze well (consistency-wise & flavor/presentation). I'm looking for freezes well ~1-3mos. and there's only 2 of us, so small recipies are ok, better if they can be doubled/tripled, etc.
I did a search, but I kept getting error messages when I went into the pages I wanted to view. http://www.cookinglight.com/bbs/frown.gif
So, lay it on me! I'd love to see some of the interesting meals that I know are out there! TIA
