This earned a big thumbs up from DH and me. It's a definite keeper. I loved the sweetness of the tomatoes, corn and cornmeal crust mixed with the tangy, savory cheeses. We both had to restrain ourselves from eating a second piece. I know I'll be loving it for lunch tomorrow.

Sides were Frijoles de Lata delicious, nutritious and easy black bean recipe from the ISO: Black Bean Recipe recipe thread of earlier this week, served over brown rice, and a green salad.

A Lindeman's Shiraz filled our glasses, Ivan Lins our ears.

I love summer! http://www.cookinglight.com/bbs/smile.gif

We had the Buttercrust Corn Pie for dinner today (same issue) so now I have to make this one and compare. We both liked tonight's dinner...similar sides...black beans, salad with the lime-cilantro vinaigrette (from the quesadilla recipe, June 2001), salsa, and key lime pie.

Oh and we had Etta James.

Finally made this one tonight and it was very good. I loved the combination of the roasted corn, tomatoes and fresh basil. I did cheat on the cheese and add more than the recipe called for. The instructions for making the crust were way over done. All of the chilling and the plastic wrap were not necessary. I started that way, got frustrated with the plastic wrap and just rolled it out on my marble board. No problems with sticking at all... I have made the Butternut Corn Pie recipe also. Overall, I propably prefer the Corn Pie over the Tart. However, both were good.
