I want to try a CL recipe from 1995 for Chicken Marsala. It calls for "browning-and-seasoning sauce (such as Kitchen Bouquet)." Does anyone know what this is and where it would be found in a grocery store?? I looked in my local store in the spice/seasonings section to no avail.

I always have this product on hand to add a little richness of both taste and color to meats. It comes in a brown glass jar with a yellow label and yellow cap. I usually find it in the seasoning and spice aisle, but some stores have it near gravy mixes, too. Did you try asking at the customer service desk in your grocery store? Most of our stores here will order a product for you if they don't stock it.

Thanks Tami. I will look a little harder and ask at the help desk if I still cannot find it. In the meantime, I have found a different Chicken Marsala recipe to try that does not call for Kitchen Bouquet. I went to the CopyKat.com web site that was mentioned in another post and found a Chicken Marsala recipe from the Olive Garden. Looks yummy! Will post if anyone wants it.

Please post the recipe, it's my brother's favorite meal and Olive Garden and I'm sure he'd like to know how to make it...I would too, by the way.

Here is the Chicken Marsala recipe that is supposed to be just like the one served at Olive Garden. If you go to copykat.com andwww.topsecretrecipes.com, (http://www.topsecretrecipes.com) there are lots of other Olive Garden recipes that look yummy.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 Chicken half breasts - boneless -- skinless
1/4 cup Wondra Flour (Cake Flour)
1/2 teaspoon Salt
1/2 teaspoon Oregano
4 tablespoons Oil
4 tablespoons Butter
1/2 teaspoon Pepper
1 cup Fresh Mushrooms -- sliced
1/2 cup Marsala Wine

Combine flour, salt, pepper, and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the beasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes.

I have always found it in the gravy aisle, I keep it on hand, too, it's great to add flavor to gravy. Learned this from my dear ole mom.

You know, I've been thinking about this for a while now, and I think that the browning sauce I own is made by the soy sauce people... La Choy, I think.

Yes, I'm almost positive that's who makes it. And I think I got it in the Ethnic Foods section (Asian cooking)! It's great for stir-fry, as it gives good color and flavor to the sauces -- and it's essentially the same as any other browning sauce in the world.

So, if you can't find it elsewhere -- look to the Orient http://www.cookinglight.com/bbs/smile.gif

Laura B.-thanks for posting the marsala recipe. I made it tonight for our anniversary, along with lemon basmati rice, stuffed zuchini (an amazing Moosewood recipe, which I am happy to post if anyone wants it), salad w/homemade vinagrette, and CL's brownie cheesecake torte for dessert. I even pulled out the nice china for the occasion!
