(I think that's the name.) From 6/01 issue.

Very yummy and simple! The flavors were amazing - very tangy and fresh (can fresh be considered a flavor? http://www.cookinglight.com/bbs/biggrin.gif )

This would be great with grilled chicken or a light fish. I served it with the asparagus-turkey wraps with roasted red pepper mayonaise from the 5/01 issue and some chilled, shelled edamame lightly salted.

I did substitute cilantro for the mint and it was a very nice complementary flavor.

As we have stated before...we all have different tastes. I hate to post negative reviews, but we didn't like this salad at all. I made it as written including the mint. The first night, I thought the dressing was somewhat bland..very mild curry flavor. Something about the mangos and tomatoes didn't work. It was a texture problem mainly. When I tried to eat the leftovers the next day, the tomatoes had a "furry" consistency to them Yuck! One taste and it went right down the disposal.

Sorry to disagree but I have to be honest.

I thought this was terrific. I made it for breakfast this morning with some over-ripe mangoes. I made some whole wheat toast to have on the side. A good change from cereal and milk. I realize this isn't a breakfast recipe but it sounded so good this morning. The orange juice,mint and mangoes....yum
