Hi! I recently bought a bunch of corn-on-the-cob because it is in season and was really cheap! The problem is that there are only two of us in my household, and we've been eating corn all week! My question is, how long does corn stay fresh in the fridge (it's unshucked in a ziplock)? Can I freeze it? Thanks!

My neighbor buys corn and freezes it. She takes all the husks off though. I'm not sure it she blanches it first though.
I would think that corn stays fresh for about 3 or 4 days in the fridge otherwise.

My grandparents have a corn field, so my grandmother freezes much of the yield. She cuts it off the husks, blanches it, then stores it in freezer bags. Just make sure you get all the air out of the bag before you seal it completely -- a straw works really well http://www.cookinglight.com/bbs/smile.gif

I just read somewhere that you should remove the silk and husk from fresh corn immediately, as it draws moisture from the corn and makes it tough and less juicy. Also, I would freeze it as soon as possible, as corn is one of those vegetables that really declines in quality with every day it spends off the stalk. Of course, I'm seldom able to get it anywhere but out of the produce department at the supermarket.
BTW, I really envy those of you who have farmer's markets close by. DH and I are going to drive 2 hours to go to one on Saturday. I'm not sure why we're bothering--I only have the freezer on top of my refrigerator, which is pretty full now that I've been on my FoodSaver obsession for a whole week! http://www.cookinglight.com/bbs/tongue.gif

Right! It's in the July issue of CL. Which doesn't explain why my grocery store has numerous signs admonishing you to leave the husks ON.

You know, I read that article too and I swear my corn stays fresher when I just keep it in a plastic bag unhusked!! The corn is really fresh now, too, but last week I had enough for a whole week and the last pieces were every bit as fresh as the first.
