We had this two nights in a row. It is so good and so beautiful. I didn't use watercress. I used green curly leaf lettuce. The vinaigrette is delicious. I ate my salad with a spoon so I could get all the vinaigrette. The first time I served it like it suggests, but the second time I put it all in one bowl. Lettuce on the bottom, then cherries, then apricots and poured vinaigrette all over. It is gorgeous looking (bright green curly lettuce, dark red bings and bright orange apricots with the little black poppyseeds) and very refreshing. Will repeat for sure.

Thanks for the review, Norma. I'm planning on making this as a side dish to the grilled bacon-grit cakes early next week; now just have to find apricots & cherries at a relatively reasonable price!

I cannot wait to make this salad -- I planned to make it this week, but then I was so irritated because I had all my ingredients and couldn't find the dang cherries. So I just made a viniagrette-watercress salad instead. http://www.cookinglight.com/bbs/frown.gif Maybe next week....

We had this salad at the beginning of the week and loved it! I am not crazy about watercress so I served it with gourmet greens. It really was beautiful to look at and I agree that the vinaigrette was great! Good summer salad!

I ended up not making this until last night, and it was really good! At DW's insistence, we added a couple tablespoons of chopped pecans. And also used some leftover spinach instead of picking up some watercress. Can't wait to gobble up the leftovers in the fridge!

Here's another thanks for the review. I only had a brief chance to glance through that issue before heading out to my field season, and now that I'm settled, I'll definately have to make this! It sounds delicious!

Ok, I'll add my review to this. I love apricots so much, and the cherries looked good at the store, so I made this. I was very disappointed. It was edible for sure, but in no way got me excited at all. I did not look forward to the leftovers, and in fact, I threw the rest of the dressing out and just ate the cherries and apricots by themselves, and used the mixed greens for a different salad. Sorry I didn't love it as much as everyone else. I thought for sure I would. Oh well.

Grace, what was it you didn't like about it? I'm curious because I was thinking of making it but I usually agree with your reviews so I'm wondering whether to try it.

Oh my goodness - Grace and I actually disagreed on this one... Is this a first?!!!!:confused: Oh well, it was bound to happen after a year of near perfect agreement!

I know, I'm amazed too, Peggy. That's why I thought for sure I would like it. It was something about the dressing I didn't like. I guess I like something sweeter? I don't know exactly, but I would definitely NOT make it again. I might make the greens with the cherries and the apricots, but definitely use a different dressing.
I wish I could give you a better answer, LG......it was the dressing though, for sure. I'm sure it would be better with a fruity, sweeter dressing.
