View Full Version : Lost Risotto Recipe????

You probably won't believe this one, but . . . I wrote down all the ingredinets that I didn't have at home to make a risotto with peppers & corn. I think I needed Parmesan cheese, pepers and corn. I then went to find the recipe and couldn't. It was a recent CL, but . . . I thought it must have been the April 2001 issue since I was also missing that issue so I bought the CookPak. Stangely enough it has a recipe for risotto with peppers, but there bottled (I'm sure the recipe called for broiling the peppers) and Monteray Jack cheese with jalapenos.

Well if someone can please help otherwise I may need to check my sanity.

The only southwest style risotto recipe I could find is the one in the April 2001 issue - the one that calls for bottled red peppers. Perhaps when the board is up and running without so much lag and more people can get in, someone might remember another risotto recipe.

I can't believe it! I'm not going crazy. The recipe is from the Complete CL Cookbook and it is a sausage and pepper risotto with Parmesan cheese. Yum, I can't wait to make it!

The recipe was wonderful. The risotto was very creamy and the sausage gave it a nice flavor.

It was from the Complete CL Cookbook a definite thumbs up!
