I've never used any of the egg or parts of eggs susbstitutes. I wondering how good they are and how they are used. For instance in baking or for a custard type pie filling. Love to hear from anyone who has used or does use them.
Thanks

I've used a product called All Whites, which is just the whites. I've used them for scrambled eggs and in making pancakes and they work just fine!

I use the All Whites product too, quite a bit. These are not a substitute--merely the actual egg white-pasteurized. I make omelettes with them and use in cooking. The egg substitutes I use in cooking and have never noticed a difference. I admit I have never tried these to say scramble or anything.

Thanks for your input. I think I'll start experimenting - I'm particularly curious about how they would perform in a tart using fruit and a custard filling. I think the egg whites product would be very useful to have around, rather than separating eggs all the time...thanks again.

I have never tried the All Whites, but I use EggBeaters and comparable products all the time. Like Kristi, I haven't used them for scrambled eggs, but I've done quiches, cakes, lasagne, and all sorts of things that call for eggs without any negative consequences. Anymore, the only time I use real eggs is when I splurge and make REAL cookies with REAL butter, REAL chocolate chips, lots of sugar, and REAL eggs. I almost feel like EggBeaters in these would be a sacrilege! http://www.cookinglight.com/bbs/wink.gif

I have used egg beaters in cakes and breads. I also got powdered egg whites which you add warm water to reconstitute. Those I have used in breads calling foe egg whites and they have worked fine. For eating I don't like egg beaters too much but I will eat them. When I make stuffed peppers I rather use eggs beaten to put on top than egg substitute. I think I bought the powder egg whites for a margarita pie a while back.

I use EggBeaters for scrambled eggs and they are great. Try them a few times and you'll be hooked.

I've used the egg beaters in cookies and they turned out just super. (For the recipe see Monster Cookies on the Great Food BB) I don't see why you couldn't do cakes and whatnot too.
