any good tips or meal suggestions out there for when you only have to cook for two and you don't want to eat the leftovers ALL WEEK LONG! it's tough to have a well rounded meal when only one dish is more than enough!

Kelly: I love to make recipes that have 4 servings. We eat two for dinner and two for lunch the next day and then start over again for dinner that night. When we don't have leftovers for lunch, both my SO and I eat bad things for lunch so it works out great for us.

I plan my meals two weeks in advance to include a lot of leftovers. I just leave them until the following week. Sometimes this results in a freezer that will barely close but it saves a lot of time. I have soup in the freezer at the moment that has been there for 2 months. We overdosed on it for a while but when we have the taste for it again it will be there. I grew up in a big family so it is almost impossible for me to cook for only 2 people.Besides I like having left overs for lunch.

Before my son's birth, or for that matter before I even was married, I used to break down portions of meat or chicken as soon as I came home from the market, freezing the extra to use for another dish, another time. Then I'd pare down whatever recipe I used, to 2 or 3 servings. The advantages: few to no leftovers and an extra portion of uncooked meat in the freezer to use for a different recipe entirely. Sometimes I'd also cook something I knew would freeze, serve part of it one day and freeze the rest. That was nice, too, having something already cooked, just needing a thaw and warm-up!

I cook for two but enough for 4. When I have leftovers for example 2 country ribs, rice, stir fry I just use the pork with the rice and make fry rice. Sometimes you can "transform" leftovers. You can just cut the recipe in half. Cooking Light had some lasagnas for 8x8 pans rather than 13x9 for example. When I recipe is for 4 I just make half. But believe me sometimes its great to rely on leftovers specially on the weekend.
