View Full Version : Looking for Honey Mustard Dressing

My favorite salad is Wolfgang Puck's Chinois Salad. My boyfriend was kind enough to bring me one back from the aiport this past weekend. It reawakened my craving for this salad.
So, I have decided to try and make my own -- slightly lower version. The salad consists of: nappa, green and red cabbage, carrots, daikon, grilled chicken, fried wontons (I am going to bake mine) and honey mustard dressing. I was really surpised when I read the label and discovered the dressing was honey mustard -- I would have sworn it was peanut dressing (so much for my memory).

Here is a recipe for a honey vinaigrette traditionally served with Chinois Chicken Salad... It's fairly high in fat (as it looks), so you might want to cut out some of the oil. However, the peanut oil in this recipe might explain your "peanut" taste.
VINAIGRETTE
2 bunch scallion (white portion only)
1/3 cup pickled ginger, packed
1/4 cup chinese mustard powder
1/2 cup shallots, chopped
1/3 cup honey
2/3 cup soy sauce
2/3 cup ginger vinegar
2 cups peanut oil or vegetable oil
3 tbsp sesame oil
1/2 cup chili oil
Combine first seven vinaigrette ingredients in a blender. Cover and puree for 1 1/2 full minutes. While blender is still running, slowly drizzle in the three oils until the vinaigrette is thick and emulsified completely. Check the seasoning and adjust as desired with salt and pepper. NOTE: The entire batch may not fit in a conventional home blender, so you may need to separate it into two parts.

Now you have my interest aroused. I just checked on my favorite bookseller site and see there are 2 Wolfgang Puck cookbooks available. One is French cooking for the American Kitchen and the other is Recipes from Spago, Chinois, etc. Is the second one the one your recipe is from? Would you recommend the cookbook?

I know I checked at least one cookbook -- possibly both and the recipe wasn't in it. I have not invested in either cookbook.
I'll provide an update and a recipe after I give it a try possibly next weekend.

Well I tried to make my own Chinois Salad and it came out pretty good. I used a light honey mustard dressing but it was lacking. I am going to try Lorilei's recipe next time. It sounds like it has the peanut and the zip from the seasame oil that I may be looking for.

Wolfgang Puck's Chinois Salad

Honey Mustard Dressing
4 cups green cabbage leaf
4 cups nappa cabbage
2 cups red cabbage leaves
1 cup carrots -- shaved
1 cup daikon
4 each green onions
6 ounces chicken breast, no skin, no bone, R-T-C
4 each won-ton wrappers
Mix together yogurt, honey and mustard. Add salt and pepper to taste.
Grill chicken breasts and slice thinly.
Preheat oven to 375 degrees. Coat cookie sheet with cooking spray. Cut won-ton wrappers into strips (about 1/2 inch thich and 2 inches long). Place wrappers on cookie sheet and spray lightly with cooking spray. Bake 5-7 minutes until golden brown.
Chop green, red and nappa cabbage. Mix together. Shave (peel) carrots or thinly slice. Add to cabbage. Thinly slice daikon and green onions and add to cabbage.
Add chicken and won-ton wrappers and mix together. Mix in salad dressing. and serve.
