View Full Version : Dried ginger = how much fresh ginger??

I just got some really nice powdered ginger from Penzey's and want to start using it but I don't know if I should substitute it 1:1 dried for fresh. Any ideas?

Also, some of the recipes I'm seeing say 'grate 1/2 inch of fresh ginger'. how the heck much is that? a tsp?

I really wouldn't substitute dried ginger for fresh. To me, they are completely different entities. Powdered ginger is typically used in baking or sweet dishes, while fresh ginger is used in more savory dishes, although some recipes do call for fresh ginger. I just don't think they are interchangeable.

I agree. I'd stick with recipes that actually call for powdered ginger to use your new Penzey's stash. It's really not interchangeable with fresh ginger. You could do it, but the result would be different.
