View Full Version : Chicken Caesar Salad is excellent but....

Tonight I tried the Chicken Caesar Salad from July '00. I kept being surprised by the ingredients "allowed" but didn't check the nutritional facts until the end. That's when I discovered that it is 16 grams of fat per serving - 47% of the calories. A bit high!!

I know Cooking Light occasionally offers recipes that are not tecnically light, such as the dips in one of the holiday issues. However, that was in the context of the CL dips being lower in fat than the usual party fare and they stated that the fat content was higher than their typical recipe. This recipe carried no warning!

But, as I said, it was VERY good and very easy to boot. And you can even use lime instead of lemon - for some reason I read lime, not lemon!!!! Maybe next time I'll try upping the lemon (or lime!) and cutting down the olive oil.

I can't wait to eat the leftovers tomorrow for lunch!

I'm glad to hear the Chicken Caesar Salad is good, have it on my list to try. I didn't notice that the fat and calories were so high, glad you pointed it out. I too know that CL doesn't alway offer the "lightest" of meals, but still always trust them enough to not bother looking at the fat, calories, etc. I'll have to start looking and do a couple more sit-ups that evening http://www.cookinglight.com/bbs/smile.gif

I made this salad and we loved it! I didn't think it was too high in fat, although I did comment to my husband that the amt. of olive oil seemed to be high. I just reduced it. Also, instead of using a whold roasted chicken, I cooked two boneless chicken breasts and chilled them in ice water and shredded with 2 forks. It worked out great. I was thinking that it would be good for leftover grilled chicken, too.
