Tonight I tried the Chicken Caesar Salad from July '00. I kept being surprised by the ingredients "allowed" but didn't check the nutritional facts until the end. That's when I discovered that it is 16 grams of fat per serving - 47% of the calories. A bit high!!
I know Cooking Light occasionally offers recipes that are not tecnically light, such as the dips in one of the holiday issues. However, that was in the context of the CL dips being lower in fat than the usual party fare and they stated that the fat content was higher than their typical recipe. This recipe carried no warning!
But, as I said, it was VERY good and very easy to boot. And you can even use lime instead of lemon - for some reason I read lime, not lemon!!!! Maybe next time I'll try upping the lemon (or lime!) and cutting down the olive oil.
I can't wait to eat the leftovers tomorrow for lunch!
