Anybody have a good raspberry frosting recipe that I can use for cupcakes? I need to turn it dairy-free (sub soy milk) since my friend can't have the caesin in milk.

Here's one. You could sub the butter for soy butter



Raspberry Frosting
2 tablespoons butter
2 cups confectioners' sugar, divided
1 teaspoon vanilla extract
1/4 cup seedless raspberry preserves

Combine butter, 1 cup confectioners' sugar, vanilla extract and preserves. Blend well. Add remaining 1 cup confectioners' sugar and stir until smooth. Spread on cake.

I was already to reply until I got to the dairy free -- I made one with cream cheese! :eek: It was good though. Adding the raspberry preserves (get seedless) is a good way to get there.

I've never used them, but there are a few different dairy free "cream cheeses " out there! They should be a decent sub!

Frosting was great! Only problem was that there wasn't enough to cover all the cupcakes so I sprinkled some with powdered sugar. Also, it is an odd shade of brown instead of the pink I was anticipating. Wonder if that changes based on the brand of preserves? Thanks again though, it tasted great :)

Maybe a little bit of red food coloring would have helped?

I don't know...it was brown (almost like a mocha color). Just didn't look like it would be raspberry frosting
