I am leaving my office and someone actually mentioned that she would miss my recipes! She asked about corn relish and a search did not turn up anything (my search skills are poor, admittedly). Anyone have a good recipe for corn relish? TIA :)

Corn Relish

Amount Measure Ingredient -- Preparation Method

2 12 oz cans corn, whole kernel, canned -- drained, save juice
2/3 cup onion -- diced
2/3 cup green bell pepper -- diced
1/2 cup celery -- diced
2/3 cup pimiento
1/2 cup white vinegar
1/4 cup sugar
1/2 teaspoon celery seed
1/4 teaspoon tumeric
2 teaspoons dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
dash hot pepper sauce
1. Drain liquid from corn, reserving 1/2 cup. Combine corn with onion, green pepper, celery and pimento in a large bowl.
2. Combine the reserved corn liquid, vinegar, sugar, dry mustard, and spices in a small saucepan. Bring to boiling; pore over vegetables. Cover with plastic wrap. Refrigerate overnight, stirring occasionally.
Makes 5 cups.
