View Full Version : Review - Roast Chicken with Fennel and Oat Stuffing (CL - 9/06)

My DH loves roast chicken so I decided to give this recipe a try last Sunday evening. Unfortunately, it will not be a repeater in our house. The chicken itself was simply roasted - no special rubs or seasonings which is fine because I think it was supposed to be a back drop for the more complex stuffing. We just didn't think the oats were a good stuffing base. It was a texture problem, I think. It was a bit on the dry side and DD complained about the licorice flavor from the fennel. We all ate it but I don't think there will be another oat stuffing on our dinner table in the future!

Kudos to you for even trying this one! It seems as if it tasted exactly like it sounds!! :p I'm thinking if oat stuffing was really good, people would have been eating it for a couple hundred years by now.... ;) :D

That disappoints me, the title of the recipe sounds promising. I happen to love the licorice flavor of fennel with roasted chicken, but I know I wouldn't like the dryness of the stuffing. What about adding more liquid to the stuffing, do you think that would help?

UnGourmetGal - I was also intriqued by the recipe which is why I tried it. Perhaps more liquid would have moistened up the stuffing a bit. But the real problem for us was the taste and the texture of an "oat stuffing". I am certain that many people out there would love oat stuffing. I had hoped we would, but I'm afraid we are not in that group. I encourage you to try the recipe and perhaps you and your family will find it more pleasing. I was excited by the different stuffing idea...it just didn't work for us. I would be interested in hearing your opinion after you try the recipe. :)
