View Full Version : Pie crust-bake before filling or not???

I am baking a pecan pie for Thanksgiving. I have made one before and cannot remember if I need to bake the crust before filling with the pecan mixture or not. Some of the recipes I have seen tell you to bake 10 minutes before filling. I don't want to burn it if I bake before filling and then put back in the overn to cook the pie. Does it matter if I bake it before filling?

Hi Melissa,
First off- I am not a pie baker, but the recipes I have made for Pecan Pie call for
NOT pre-baking the crust. I admit that I do on some pies if the crust did'nt cook right the first time I baked it, etc.-(whether it was supposed to be or not).
On any pie I bake, I pre-make a foil ring for the crust for when it is getting too brown. Ahead of time I take a square of aluminum foil & place the empty pie dish on it. Trace the bottom of the pie plate and cut out the circle. (Make sure the square of foil itself, is big enough to wrap around & under the pie, so it doesn't fly up when baking).
When the crust around the pie is getting brown & the pie isn't done, cover it w/ the square of foil & the crust will be covered & the middle will have the circle cut out, but still be exposed so the pie will finish baking. It works for me every time, whether I'm baking a quiche, a dessert pie, or pot pies.
