With the holidays coming up I cant imagine not doing my baking. I know I can use sugar substitues but I'm hoping to find some good receipies that will work well with those. Its hard to think about the holidays without Chocolate. http://www.cookinglight.com/bbs/frown.gif

I make these wonderful poached pears for my dad, who is diabetic.

Peel, core and quarter pears (I usually use four). They can be a bit underripe, and overripe fruit will just turn to mush.

Place in saucepan and just cover with orange juice. Add a cinnamon stick, a couple cardamom pods and a few whole cloves. Simmer until pears are tender (can take up to an hour). Remove pears, cook juice to a syrup and pour over pears. Serve either warm or cold.
