I need a recipe for pickles done in a crock,fermented, and then canned. We picked up a crock while antiqueing and have had a dickens of a time finding a recipe to actually use it! Some kind soul please help!!!

If I were you, I'd fill the crock with water first and let it stand in the sink overnight to see if it leaks. Then, just use any recipe from a reliable cookbook like"the Doubleday cookbook"by Jean Anderson( no kitchen is complete without it)Good luck, Noni

I have a couple of books that could help you, but they have instructions for the techniques as well as recipes. It would require copying several pages of information to get that all to you. I would recommend Pickles and Relishes, 150 Recipes Apples to Zucchini by Andrea Chesman. It's softbound and I think the price was under $10. Barnes and Noble online (bn.com) carries that as well as two other books by her. Keeping the Harvest also has instructions on brining and can be ordered through bn.com. Hope that helps.

Shelley, if you find the crock doesn't leak and get a batch of pickles going in it, I'd like to hear how they went. My husband and I tried to make sauerkraut in a small batch once without success, but have not tried brined pickles. By the way, one of the books I mentioned above suggested the 5-gallon plastic tubs used in bakeries and such as new-fashioned crocks, in case you get addicted or someone else reading wants to try it.
