I too, find myself with an abundance of very ripe bananas today. Okay, well, I have three. But being the frugal person I am...I don't want to throw them out.

Has anyone tried the Banana Date Flaxseed Bread from October '99? I've got all the ingredients and wanted some feedback before I hit the mixing bowl. I do like a "moist" banana bread...so many recipes come out dry.

Many thanks for your feedback.

I also tried the Banana Date Flaxseed Bread and liked it. I didn't have any dates though, so I tried substituting dried pineapple. It tasted a bit odd, but good. I do agree though that the Jamaican Banana Bread is better!

Hmmm...thanks for the input! I'll search for the Jamaican banana bread and give it a try.

I promise that this will be moist, just give it a whirl. It's simple but you can vary it by adding;orange peel, sunflower seeds, dried cranberries, dates or even chocolate chips( which bt the way with the orange peel is excellent.
5 md ripe bananas mashed
1 egg
1/4 cup canola oil
2/3 cup sugar
1 1/4 cup white flour
1/2 cup whole wheat flour
1 tsp baking powder
1/2 tsp salt
pinch of nutmeg

Mix bananas, egg, oil and sugar. mix dry ingrediants and add to banana mixture. Stir until combined. Pour into loaf pan coated with cooking spray. Bake at 350f for 40-50 min or until tooth pick comes out clean. Yummy!

That Jamacian Banana Bread was wonderful! It is on my menu for my ever mentioned luau. (Jamacian??? Hawaiian??? they are close, right??) Anyway... I've served it to a number of people and it has always been a big hit.

I have made this and liked it, though the colour of it left a little to be desired. It is moist and dense. I would probably make it again, though I prefer the Jamaican Banana Bread from a few issues ago.

Definitely try the Jamaican Banana Bread, Deanna. If you can't find the recipe, let me know.

I made it for the first time last week after all the great reviews and was not dissappointed. Even the people at work liked it, and they're a tough crowd (they have some serious aversions http://www.cookinglight.com/bbs/biggrin.gif)

Thanks for all the comments, and Cindy, thanks for your recipe. I'll put it in MasterCook and try it next time. I'm anxious to try this Jamaican bread and am going to start it this morning.

Mary Ann, thanks a bunch for the offer, but I do have the recipe. MasterCook is a wonderful tool!

Cindy Armstrong,

I just wanted you to know that I made your banana bread this weekend! It was a big hit! Very moist, as promised--I didn't add anything to it, it was just plain and wonderful! My mom couldn't believe how many bananas were in it but I figured they took the place of oil and/or eggs. Is that right?
Anyway--it was easy and great. I'm going to buy a bunch of bananas and just let them ripen so I can make another loaf, this time with orange peel and chocolate chips--YUMMY. Thanks for the recipe!

I made this bread last weekend, and it turned out very good! It was alittle more involved than the my usual banana bread, but I was pleased.

Cindy, I also made your bread recipe before and really enjoyed it. It was quite a while ago, but I think I used orange peel and chocolate chips. Thanks for the recipe!
