Its about that time and I've been getting the cravings for some nice Pumpkin and Apple spiced baked goods.
I am making Valchemist's Gooey Apple Sheet cake and I'm trying a couple of new pumpkin recipes, pumpkin pudding and pumpkin apple butter, from www.verybestbaking.com this weekend.
What are some of your favorite fall foods?

Definitely pumpkin anything comes to mind first, but also roasts. Pork roast and Pot Roast go on the menu all through the fall.

Apple stuff is good too, especially Apple Crisp. Mmmm, love to smell that one baking.

Muffins of all kinds. I just seem to do a lot more baking once the weather cools off. I hate cranking up the oven when it's in the 90's with high humidity.

Apples, cranberries, cinnamon...for savory fall favorites, roasted chicken or pork, pretty much any soup. I LOVE fall...definitely my favorite season!

Fresh apples and pumpkin baked goods!

I haven't made anything pumpkin-y yet, but I've done a couple things with apples, and I'm on my way to The Big E (http://www.thebige.com/) on Monday to have my favorite apple crisp! Yum yum!!

Now we are speaking my language-my favorite time of year is FALL. Nothing compares-to wearing sweatshirts and jeans and being comfortable or being in sweats, wrapped up in your fav. fleece blanket reading a good book. Or....Football games, leaf peeping, Applefests, Pumpkin Festival, Halloween and decorations for the holidays, etc... you see what I mean-haha.

I LOVE the Fall-and everyone around me will tell you the same!

So my favorites are (we don't have to just do foods right:^):

*Macintosh and Harvest Yankee Candles (light these up at any time and you will be SO happy).
*Macintosh Apples from the apple orchard
*Apple Cider (hot with cinnamon and spices)
*The smell of the country when there is a chill in the air
*Apple crisp and Apple Crunch
*Pumpkin muffins and bread
*Banana Bread
*Hot chocolate
*Starbucks Caramel Apple Cider
*Homemade Apple Pie
*Picking apples at the apple orchard or picking out your fav. pumpkin and carving it
*Fresh Garlic.....amazing
*The quietness on an early Sat or Sun morning before everyone else is up and the smell of the clean, crisp air before he city travel starts
*Overall just the smell of Fall and all the wonderful foods that come with it!

While its not yet autumn here in CA (does it every really become autumn?) I have been craving autumn foods. I grew up in Western New York and Fall is definitely something I miss - foods included. My favorite childhood fall food was apple cider and apple crisp. But these days what I crave is butternut squash. I like it roasted or sauted with shallots and sage. I also always start to crave comfort foods in the fall and can't wait for our first cold wet day to make some rissotto!

Apples, rosemary, thick soups (squash and potato-leek are faves)... anything you do in the oven. I'm actually kind of bummed that they're predicting a high of 80 for Monday.

Even though pumpkin has been mentioned by just about everyone, here is one more time :) I can't wait for pumpkin pies, bars, cheesecake, muffins, etc. Pumpkin anything tastes better when it's cold outside and the leaves are changing.

I also love roast turkey, honey baked ham, green bean casserole, yams, stuffing...all the good stuff that only comes around on Thanksgiving.

Where I live, a "cold front" is when the temp drops to the mid-90s, so we have to fake it and bake pumpkin anyway. I love pumpkin bread baked in shaped Bundt pans (or the Williams-Sonoma wreath pan for Xmas morning), and Ina Garten's (Barefoot Contessa) Pumpkin Banana Mousse Tart. It's better than any pumpkin pie we've ever had (and by Thanksgiving, temps should be in the 60s-70s!).

Pumpkin and apples. I always like making an apple pie. I just normally slice the apples and sprinkle sugar and cinnamon on them and bake the pie. No cheese or anything like that.

Everyone's mentioned the obvious favorites (mine, too), but there's one biggie for me no one has: pomegranates! Since I started using them in different ways a couple years back, they've become one of my favorite ingredients. CL's Pomegranate Pound Cake (sorry, Sandy! ;) ) will probably be the first thing I make, always putting one in the freezer, and I also look forward to infusing vodka with the seeds for an outstanding, different drink.

I'm definitely looking forward to making EveryDay Foods' Pumpkin Pasta with Chard and the usual Pumpkin Enchiladas, given that I prefer savory pumpkin dishes rather than sweet. The new Vegetarian Times also has few interesting new pumpkin "to trys."

Oooh, how fun to think about Fall food.... I love Bob's pomagranate addition, I just bought one last week to sprinkle on salads thinking it looked Fall-ey. Pomegranate vodka sounds beautiful, and the cake sounds prettily polka-dotted.

How about roasted root veggies, parsnips, celery root, beets,...

I love nuts, fresh nuts (they come in at our produce market), toasted and sprinkled.

And persimmons are so orangey-gorgeous, quinces are subtley scented and mysterious, but I haven't cooked too much with them, they just tempt me at the market.

We also start getting interesting grapes like muscat and concord and other slip skin grapes at the farmer's market, yummy, winey flavors.

Bob, I'm waiting for pomegranates in the market-- my absolute favorite fruit!

I have already made my first pumpkin-y baked good, BA's giant pumpkin muffins with ginger-molasses glaze. it was great, go to epicurious if you want the recipe!
Aside from pumpkins, I finally feel I can use the inexpensive everyday fruits in everything again instead of having to pay for $$$berries! I'm using apples, oranges, bananas & maple, I'm going through my oatmeal recipes and I'm craving casseroles and chili and gingerbreads. Thank goddess the temp has dropped!

Speaking of pumpkin, we just got back from K-Mart. Has anyone seen the new candles they have there? They are in glass jars and one flavor is called Pumpkin Pie. It is so pretty. Has three layers of different colors. Top layer is called pumpkin filling, 2nd layer is called cinnamon crunch crust, and the bottom layer is called heavy cream. It smells devine.

This is one of my favorite fall dishes. I have been baking and freezing butternut squash this week to have. I LOVE this. Pure comfort food.

Butternut Squash Casserole

"This recipe is in great demand from my friends and family. It tastes similar to sweet potato souffle, with a custard-like texture. Use with any meal that sweet potatoes seem to go with (for example, ham, pork, etc). Yum yum!!!"

1 butternut squash
1 cup white sugar
1 1/2 cups milk
1 tsp vanilla extract
1 pinch salt
2 Tbs all-purpose flour
3 eggs
1/4 cup margarine, melted
TOPPING
1/2 (16 ounce) package vanilla wafers, crushed
1/2 cup margarine, melted
1 cup brown sugar


1 Preheat oven to 425 degrees F (220 degrees C).
2 Put butternut squash in the microwave and cook on high, until soft, 2 to 3 minutes. Cut in half, scoop out seeds and cube. Bring a large pot of water to a boil. Add squash and cook until tender, about 15 minutes. Drain and mash.
3 In a 9x13 inch casserole dish combine 3 cups mashed butternut squash, white sugar, milk, vanilla extract, salt, flour, eggs and 1/4 cup melted margarine.
4 Bake in preheated oven for 45 minutes, or until set.
5 In a medium bowl combine crushed vanilla wafers, 1/2 cup melted margarine and brown sugar. Crumble over top of cooked casserole and return to oven to brown.


Servings: 15
Preparation time: 15 minutes
Cooking time: 1 minute

A little OT - speaking of pomegranates, for the very first time ever, they have been in abundance here in Toronto all Summer (from India) and cheaper than they used to be in the late Fall. My birds practically go into withdrawal when I can't get them so this has been great!

Today I got to use cornmeal (very fall-ish to me also), cranberries, mashed banana and walnuts in these yummy, whole-grain muffins I made. Perfect fall baking. I feel it in the air!

Fall is my favorite season by far ... soup weather, apple picking (which turns into fresh baked apple crisp), Pumpkin Bars ... can't wait!
