View Full Version : Ideas for In-Laws Brunch?
Hi all,
I am having my mother in-law, her sister, and her parents to our house tomorrow morning for brunch after church. I'm planning on making the CL Quick & Easy Quiche, Crispy Hash Browns, my family's recipe for dutch apple coffee cake....and??? I feel like I need some sort of fruit or veggie side. Brunch will start around 11:45. Any ideas???

How about simple marinated tomatoes, or tomato-cucumber salad? or slices of tomato and avocado alternated with vinegar and oil on the side? Simple, colorful, and good. I keep saying tomato here because the acidity will cut through the richness of the other dishes. looks yummy, BTW.

I would be inclined to swap out the hash browns for a fruit salad or a tomato-basil salad or such; I think it would be a more balanced meal, flavor-wise and in richness. You could also do a room-temp green beans with hazelnut as a side salad.

I'd also do a fruit salad. There's a GREAT one here on the boards, that cangoss posted - I vary the fruit, depending on what's in season and looks good, but the mango is particularly good:
Ginger Lime Fruit Salad
2 pints strawberries, hulled and halved
4 kiwifruit, peeled and sliced
2 mangoes, peeled and cubed
2 cups fresh pineapple chunks
1 cup red seedless grapes
1/3 cup fresh lime juice
3 to 4 tablespoons honey
1/2 teaspoon grated fresh ginger
COMBINE fruit in Pot Luxä pan. In a small bowl, combine lime juice, honey and ginger. Pour dressing over fruit; toss gently to mix. Cover and refrigerate. Stir before serving.
Number of Servings: 8
