My oregano is doing beautifully right now - I have so much I'm not sure what to do with it! I make several things that call for a little bit but I was wondering if anyone had recipes that would be perfect for a bumper crop?

I second this request! I went to see my parents last weekend and my mom sent me home with a ton of oregano! I have actually never cooked with it before and don't know what to do with it.

When my mother picked oregano in the woods in Italy, she would just dry it and use it on pizza and in tomato salads. I don't recall her ever using it fresh. But tomorrow, when she comes back from her trip I will ask her. http://www.cookinglight.com/bbs/smile.gif

It seems I always have an abundance of oregano in my herb garden. I use it all the time in recipes but must admit it's only a teaspoon here and there. I end up drying it and using it that way.
Wish I had a terrific oregano-filled recipe to recommend...

Hrmph.
Problem with oregano is that too much of it in almost any dish is a bad thing -- it's not like garlic or basil that way. ( http://www.cookinglight.com/bbs/wink.gif Well, maybe that's a subjective thing)
I suppose if you /really/ like oregano, you could make oregano pesto (substituting it for the basil).
I would freeze it or dry it for future use .

Guess I'll start "harvesting" it and drying it. I need to go find my own (empty) spice jars.

I ended up with so much dried oregano that I used it in my fireplace. It smelled so good as it was burning.
Think Christmas gift ideas, I'm sure people would love a gift that you grew yourself.

bookworm -- that reminds me of another idea. Try putting some of the oregano in your charcoal grill on hot coals, right before you add your grilling foods -- it can really infuse your foods with a lovely flavor, and it would certainly use up some of your excess herbs!
Hmmm... or what about herbal vinegars or infused oils? Oregano would be peppery and lovely for an oil!
