Please forgive me if this issue was covered extensively on the old bulletin boards... Having almost exhausted my June 2000 issue, I am beginning to return to issues earlier this year for recipes and menu ideas. I find that I have barely scratched the surface of the April 2000 issue! I would appreciate feedback regarding recipes in that issue to give me help in where to start. These bulletin boards are a wealth of info when it comes to recipe recommendations!
So far I have made and enjoyed the Shrimp, Peppers, and Cheese Grits, the Ham and Swiss Loaded Potatoes and the Shrimp and Feta with Angel Hair. All were good and possible "repeaters" for me. (The problem is I rarely repeat anything because there is always a new recipe I want to try!!!!) Any suggestions????
Thanks again!
Peggy

Hi Peggy
I also made the Brown Sugar Pound Cake very good. My husband uses it as a shortcake. He puts strawberries, blueberries or peaches on the cake. Creamy Parmesan Pasta with Turkey Meatballs page 124 is very good. I will definitely make it again. I would also recommend the Chicken Fricassee with Orzo.

Here is what I have tried:
(Oh and thanks for the Shrimp and Feta suggestion on the shrimp thread - I had that one dog-eared but never tried it)
Brown Sugar Poundcake - good.
French Toast Soufflé - v. good (for company -not worth extra effort over regular french toast if you're just cooking for a few)
Sesame Barbecued Tofu Over Noodles and Greens - very good, very different (something if you're feeling adventurous!)
Port Wine Sauce - I did this with pork instead of steak. I loved the sauce, but my husband didn't like it with pork.
Chicken Fricasse with Orzo - very good - easy and yummy - I'd recommend this one for sure.
Indian Chicken Curry - good - it tasted a bit more "chili-like" to me - not enough curry taste coming through, but still good.
I didn't try it myself, but the Fresh Strawberry Pie got many rave reviews on the old board (as well as several of the poundcakes). I plan to make this soon.
I NEVER seem to "finish" an issue - the new one always arrives before I finish! It's the dilemma that ElinorC spoke about in another thread - too many recipes, too little time!!!

BethH-I just wanted to give you another plug for both the spaghetti pie and the chive knots. You may need to add more seasoning to the pie, but they are both fantastic. Actually, I am making the spaghetti pie as we speak to freeze!

Another rave review for the spaghetti pie! I was a little apprehensive making this for my husband, but he loves it so much, I have made it three times already and I've passed the recipe on to my sister. She's vegetarian but wants to try it with her imitation "crumbles" that are like chopmeat. There's just me and my husband at home, but we hardly have leftovers when I make spaghetti pie.

I haven't made many from the April issue yet either. I've only made three meals, but have liked all of them.
Creamy-Paramesan pasta with turkey mealtballs
tortellini primavera
chili cheese rice burritos
Have fun cooking and baking.

Ok, I wasn't reading this bullitin board when I tried this, so this one may have already been discussed, but I love the Southwestern "speed spuds" recipe. That is the one with the black beans, tomatoes, cheese, peppers, etc. It is so easy, and the topping keeps well in the fridge to use at a later date. I tried the steak and mushroom one too, and it was good, but I just think the beans have a better consistancy that works with the potato.

Peggy:
I'm so happy to hear your reviews from April. I had gone back to that issue myself and am planning to make the Chicken Fricassee with Orzo this week. How funny! I will definitely try it now!
shoyski:
I'm also planning to try the chive knots and the spaghetti pie--so I'm glad to get your reviews as well. I'll post my reviews at the end of the week! http://www.cookinglight.com/bbs/smile.gif

I made the Chicken Fricasse with Orzo last week, and it was delicious. Definitely a repeater!

I made the Sour Cream-Lemon Pound Cake and I would definately make it again. I particularly liked the glaze made from lemon juice and powdered sugar.
I also tried the Brown Sugar Pound Cake. My husband loved that one and I thought it was pretty good--just not as good as the lemon.

Thank you! Thank you! Thank you!!!
All of your suggestions have been so helpful in planning my menus for the next few weeks. So far, I have just tried the Chicken Fricasse with Orzo and the grilled asparagus. The chicken was outstanding!! My husband has requested that I make it when his mother comes to visit next month. It is rare that he makes such requests so I know he was very impressed.
Thanks again for all of your suggestions.
