OMG. That's all I can really say about these. I went to Costco the other day, and came across a box of chocolates filled with Bailey's Irish Cream. They are so...so very....OMG...evil....scandalous...wuuuuuunderful things!!
They're made in Mexico for the Bailey's company, and the quality of the chocolate is actually quite good. I didn't know the Mexicans were known for fine chocolate, so I was kinda surprised. They're about the size of a cordial cherry and have a small amount of Bailey's inside. I keep thinking I'll make a cup of hot cocoa and drop one in for flavor....and I'm trying to devise a recipe for brownies that I can use them on. Maybe make a batch of brownies and poke them in while they're still hot.
Anyway, these are incredible and would make wonderful gifts. I'm going to take a box to my next supper club meeting to put on the table during dessert. They're in the Christmas candy/cookie gift aisle at Costco and they come in a tallish "Bailey's colors" box with 8 sides. Sixty pieces per box for $8.99 at my store. Totally, totally worth it.
Warning: They're like crack. You'll wish you never got started on them. :D

We used to get those every year. You are so right, YUM! We don't have a Costco here though. Any ideas on how to make my own?

They sound delicious. I wonder if it wouldn't be better (ok, different) to freeze them and make chocolate cupcakes with them. Put the cupcake batter in each well in a cupcake pan and insert a frozen chocolate into the center of each one before baking. I'm thinking that the cupcake would bake and the chocolate would stay in pretty good shape. Ice the cupcakes with a buttercream frosting flavored with Baileys. :D

That's a great idea! I wonder if that would work for the brownies, too. I see experimentation in my future! :cool:

I didn't know if brownies would be deep enough to bury the chocolate completely inside the brownie. That's why I thought of cupcakes.

I think either Costco or Sams here has the same kind of thing. It is a large box of chocolates filled with Baileys, Kahlua, Cointreau, etc. They all sound good to me :D

One of the recent Cooking Light magazines had a recipe for Brownies made with Baileys. I'm definitely saving that one to try.
During the summer I had the new Baileys with caramel - oh my!

Oh my, will have to try those. To date, I've thought the ultimate was Lindt's white chocolate truffles. A colleague brought them in to work one day and as soon as I bit into one I practically swooned. I told her that my mouth was having an orgasm. :D

OK, so I did the experiment. I made a batch of totally plain fudge brownies (2 boxes of Pillsbury in a 9x13 glass baking pan). When they were done and out of the oven, I took the non-business end of a wooden spoon (I guess the easier thing would have been to say "spoon handle" :D ) and made little craters in the brownies, just big enough to stick the candy in and sink it almost all the way in. The tops are still showing above the brownies.
In the interest of science and because I just couldn't wait, I went ahead and tried one hot. Ew. Hot Bailey's is EW. The warm brownie was good, tho. So this morning I tried it again cold, and it's wonderful! Most of the Bailey's blended in with the surrounding brownie and made a great little fudgy spot with chocolate on top.
All in all, a successful experiment!
Ooh, sounds delightful. Thanks for the follow-up on your expreriment. It sounds like a big success. I'm so grateful I don't have a Costco membership because I really don't need anymore crack in my house.
Now you tell me! My sister was suggesting some chocolates that were filled with Bailey's for my BIL. She said she saw some at Target, but I never found any there or at several other stores I went to. We have a Costco, but it is a 30-45 min drive without holiday traffic. I'm afraid it's too late to make a special trip, but I'm wondering if that's whe she saw them. The store is not far from her.

Beth, I found some for DH's stocking at my local Target. They were in the Christmas candy aisle on the bottom shelf. HTH.

Is that the recipe Val added the frosting to? I copied that for my sister and am putting it in a recipe binder for her. I think they'll like that one.
I looked at 2 or 3 different Targets and they must be sold out here, I looked in the holiday candy aisles. Found some other things, but no Bailey's. I stoppd at a British market today and got him some things I hope he will like there and got a bottle of Bailey's for himn and my sister. They are making out pretty good this year. ;)
