I baked some cakes and have them in the freezer. I want to frost them for a party on Saturday.

Did I read here that it is easier to frost a frozen cake?

If I do need to thaw them first, do I thaw them in the plastic wrap?

I'd frost the cake when its frozen, especially if you are not using a fondant or marzipan layer over it. It's much easier and leaves no crumbs in the icing!!!

Frost while they are still frozen. It's much easier to transfer layers, and your crumbcoat will set up faster.

Doesn't the frosting then "sweat" as the cake thaws?

I can only speak for using buttercream, but that has not happened when I frost frozen cakes. They are easier to work with when frozen or partially frozen.

Whether it sweats may depends on the size of the frosted cake when frozen, or the weather?

I made and frosted several huge cake layers for a wedding cake once, and when I took them out of the freezer, I definitely had to put them near some fans for a couple of hours to evaporate off the sweat that developed.

(I had used traditional homemade buttercream icing, and lived in San Diego at the time).

So I'd say at least leave time for that to happen (and to fix it) just in case!
