View Full Version : Freezing blueberries and corn

I'm sure most of you have done this and I want to give it a shot this year.
Do you lay the blueberries out on a cookie sheet and freeze them that way first, before dumping them in plastic bags?

Also, do you freeze corn off the cob before you cook it, or after? Thanks

Yes to the blueberries....lay them out on cookie sheet...called "fast freezing"...when frozen just pop them in bag or containers. I am not sure of corn. I think I would blanch them first, then strip corn off cob and bag up. Good Luck http://www.cookinglight.com/bbs/smile.gif

We freeze our corn while still on the cob - and we don't blanch it, just clean off all the husks and silks. I have relatives who grow corn, and my Mom's been freezing corn on the cob this way for years. Its great to have good corn on the cob in the winter time!!

I lay all my berries (blue, huckle, raspberry, currants) out on cookie sheets in the freezer. The drier they are before freezing the better. When frozen I transfer them to empty, dry gallon milk jugs (except for the raspberries, too fragile). This will keep the berries in good shape for up to a year.

With corn, I always cook it on the cob first, cut it off once it has cooled, and then put it in freezer ziploc bags. What usually happens is I have leftover ears from dinner. I just freeze the rest and then use it for soups and casseroles over the fall and winter.

I don't wash the blueberries before freezing but I do sort and inspect them for bruised, green or even mushed ones. I also make sure that the stems are removed. I have had frozen blueberries for at least a year and they were still fine to use. Just make sure that the container or ziplock bag is free of air so as to prevent freezer burn. http://www.cookinglight.com/bbs/smile.gif

Don't wash your blueberries before freezing! The water can make them go mushy. I actually just pop them directly into a freezer bag, take out what I need and rinse them with warm water to clean. That thaws them a bit too, although they are fine to use frozen for baking and smoothies.
