View Full Version : recipes for frozen tomatoes

I planted too many tomato plants and have excess tomatoes. I would like to freeze them to make tomato sauce, soups, etc. later, but I don't have any recipes that call for a frozen tomato -- any suggestions? Thanks!

You may get a better response if you try posting on the Great Food Board, but here's my thought.
You're probably not going to find any recipes for frozen tomatoes; rather, you may want to cook them, then thaw them when you have a recipe calling for canned whole, diced, etc. tomatoes.

Congrats on havinmg tomatoes so early in the garden season. I just saw my garden plot and they look healthy but it will be a long time yet.
When I have abundance of tomatoes & basil I do tomato sauce with oregano, onions, basil. Actually CL has 2 or 3 great recipes. I freeze the sauce in freezer bags that can be enjoyed all yr. If you don't have time you can put a pot of water to boil, quickly inmerse the tomatoes and remove them to a pot with water and ice cubes to prevent tomatoes to cook. Then peel your tomatoes cut in half, seed them and put them into freezer bags. YOu can use them in stews and sauces later when needed.

I don't even peel them when I'm in a huge hurry before freezing. What I do is get the tomatoes out of the garden and place them on a cookie sheet in the freezer. After a couple of hours I place them in plastic bags. When I want to use them, I take the plastic bag upstairs and let defrost on the counter for an hour or so. I then take them out of the baggie and place in a sink filled with a couple of inches of water. They skins just fall right off. I've had a better time with this method than with skinning them before freezing. This method was developed when I was traveling a lot for business when my tomotoes all got ripe at once.
