i couldn't believe what i read...you have never had feta cheese? oh, i could cry!!! it's sooo delicious! i would also say that it is much more popular/ likeable than blue cheese so chances are good that you will like it.

please try it... on a salad, in any greek recipe, or (my favorite) feta mixed with olive oil, garlic, fresh basil and ground pepper spread on bread or crackers! it's to die for!

I would have to agree with Andrea! I LOVE feta cheese and put it on everything--ok, well most things. I am not a fan of blue cheese but feta is very mild, almost like chevre but saltier.

Andrea, have you tried the feta aoili from a few issues back? It's great...I've used it with portabello mushroom sandwiches, too.

Feta goes sooooooo well in a salad with homegrown tomatoes, cucumbers, vidalia onions and green peppers (all cubed). I generally use a fat free Italian with a squeeze of fresh lemon or lime juice and seasoned salt and pepper. It's wonderful!

i've had the aioli marked for months...i've got to try it!!! thanks for the recommendation. i also want to try the baked shrimp and feta. it's gotten rave reviews, too.

I loooove feta cheese! Crumble it over fresh spinach salad! There are a couple of recipes around where it's an ingredient with tomatoes and shrimp -- yum! At my daugher's nursery school (going back aways), they had international days; they served feta cheese and sliced black olives in pita bread -- it became one of my daughter's favorite lunches, and her friends' too!

We just had the baked shrimp with feta for dinner last night and it was terrific. I think next time I may try to substitute red peppers for the tomatoes (I'm not a big fan of cooked tomatoes where the skin peels off). Ok, I admit I have texture issues! http://www.cookinglight.com/bbs/redface.gif

Just made the Feta Aioli again (3rd time!!) on Saturday for the barbeque....it was the most popular item! I made a double batch, and there's not even enough left for the 2 leftover greek burgers I have....guess I'll have to make some more??? Darn...
