We are having a Chinese New Years celebration at our next meeting. Can you suggest any appetizers that might fit the theme? I would prefer something that can be made a day ahead as my work schedule does not allow me much time to cook the day of the dinner.

Potstickers can be assembled ahead, frozen, then cooked day of.

I had thought of pot stickers but did not think about freezing them. Good idea!

shrimp toast, scallion pancakes, a satay/kebab (in shrimp, lemongrass chicken or beef) with accompaning sauces, mini fish cakes, sticky rice balls (porcupine balls) hold over good, steamed buns or a crispy seaweed dish if your looking for a vegi (can subsitute collard green or spring greens if seaweed isn't available or it just grosses ya out)

I made the recipe on Cooking Light's website for Shrimp and Pork Dumplings for our Supper Club this past weekend. Assembly took about 30 minutes, but can definitely be done in advance. Freeze them, and just steam for 10 minutes plus defrost time before serving. They were really good. I served them with a soy dipping sauce, also done in advance. It was a hit. Good luck!
