<br />
SPICED SALMON KEBABS, Bon Appetit, June 2013<br />
<br />
2 Tbs chopped fresh oregano<br />
2 tsp. sesame seeds<br />
1 tsp ground cumin<br />
1 tsp kosher salt<br />
1/4 tsp crushed red pepper<br />
1 1/2 lb skinless salmon fillet (preferably wild) cut into 1&quot; pieces<br />
2 lemons very thinly sliced into rounds<br />
2 Tbs olive oil<br />
<br />
Special equipment: 16 bamboo skewers soaked in water 1 hour (I used metal skewers)<br />
<br />
Prepare grill for medium heat.  Mix oregano, sesame seeds, cumin, salt and red pepper flakes in small bowl to combine, set spice mixture aside.<br />
<br />
Beginning and ending with salmon, thread salmon and folded lemon lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total.  Brush with oil and season with reserved spice mixture.<br />
<br />
Grill, turning occasionally, until fish is opaque throughout, 5-8 minutes.<br />
<br />
Serves 4</div>

I have Paprika but will probably not use it much (I like pinning more than clipping and I cannot use it to clip magazine article recipes because those are not on the internet). I am getting Bon Appetit, Fine Cooking and Everyday Food (the entire issues I mean) on the iPad--hoping to cancel all paper subscriptions, which is kinda weird out of someone who loves actual cookbooks so much but I cannot handle the magazine piles any longer. And I have both Evernote and Evernote Food. Any other recommendations? The reviews for Saveur on the iPad were TERRIBLE. :eek:  <br />
<br />
Also, for those of you who get magazines on the iPad, anyone have a recommendation on how to clip or save recipes from them?<br />
<br />
I am also waiting on the Williams Sonoma set up for the kitchen, the iPad holder with splatter guard and speaker, but it was backordered, probably because of Mother's Day....</div>

Chicken Souvlaki Salad <br />
<br />
The elements of a classic Greek salad and a chicken souvlaki sandwich combine in this piquant dish. You can also use lamb in place of the chicken.<br />
<br />
<br />
Ingredients<br />
2 teaspoons bottled minced garlic, divided <br />
1 teaspoon fresh lemon juice <br />
1 teaspoon extra-virgin olive oil <br />
1/2 teaspoon dried oregano <br />
1/4 teaspoon salt <br />
1/4 teaspoon black pepper <br />
1 pound skinless, boneless chicken breast <br />
3 cups cubed peeled cucumber (about 3 cucumbers) <br />
1/2 cup vertically sliced red onion <br />
1/2 cup (2 ounces) crumbled feta cheese <br />
2 tablespoons chopped pitted kalamata olives <br />
2 ripe tomatoes, cored and cut into 1-inch pieces (about 1 pound) <br />
1/2 cup plain fat-free yogurt <br />
1/4 cup grated peeled cucumber <br />
1 teaspoon white wine vinegar <br />
1/2 teaspoon garlic powder <br />
1/4 teaspoon salt <br />
1/4 teaspoon ground red pepper <br />
1/4 teaspoon black pepper <br />
Preparation<br />
Preheat grill or broiler. <br />
Combine 1 teaspoon garlic and the next 6 ingredients (1 teaspoon garlic through chicken breast) in a large zip-top plastic bag. Seal the bag and shake to coat. Remove chicken from the bag. Grill or broil chicken 5 minutes on each side or until done. Cut chicken into 1-inch pieces. <br />
Combine chicken, cubed cucumber, and the next 4 ingredients (cubed cucumber through tomatoes) in a large bowl. Combine yogurt and remaining ingredients in a small bowl. Pour over chicken mixture; toss well. <br />

4 servings (serving size: 2 cups)<br />

The recipe calls for chicken but I used tofu as did Choctini. I made it vegan and used cashew cream in place of the yogurt and heavy cream and used TJ's soy mozarella. I also used TJ's whole wheat pizza dough instead of the pita bread but probably wouldn't next time.  DH couldn't get enough of it and that's saying something since he usually only likes cheese pizza.  I highly recommend trying this. I read a recipe for Preserved Lemon (actually it was from the Jerusalem Cookbook FWIW) and the directions said to fill a container with boiling water - let dry but don't wipe so that the container remains sterile. You then fill with the lemon mixture and wait for six weeks.<br />
<br />
My question is that merely pouring boiling water into a container won't sterilize and while it is being air dried, additional bacteria and molds would drop on it. <br />
<br />
Am I missing something. I'm not particularly germ phobic in terms of normal operating conditions but this process would never produce a container that would be free of bacteria for six weeks or more. It would be okay in terms of &quot;sterilizing&quot; a bottle for a baby to drink since the container would be clean and normally you wouldn't leave the container filled with food for the bacteria long enough for the process to start.<br />
<br />
This is really more of academic interest as I will never can and probably am also unlikely to wait six weeks for preserved lemons. :)</div>

			<content:encoded><![CDATA[<div>Last night I sliced a couple of pounds of top round on the grain and am in search for a new recipe.  I have my go-to favorites, Beef stroganoff at the top, but would like some inspiration.  <br />
I often use it in place of high quality beef , stir frying, and putting aside till the rest of the ingredients and all cooked and returning at last minute.<br />
BTW: I bought two packets on sale and the other one was dry and tasteless.  It started as stew but I cut it down till bite pieces to make a good soup. I guess you get what you pay for.<br />
