yes you can freeze them...you can also do a more traditional frittata and cut it and then freeze it as well, just make sure you wrap it well and then put it in a freezer bag....good luck!

i have been known to use freezer bags, i lay them flat in the freezer so they take up no space practically. We use my stock/chili pretty quick though. lol
here is a soup made with no ham and if you change out the chicken broth and use veggie broth can be vegetarian.

i would make anything that is a crunchy cookie, like shortbreads...here is a recipe for lemon poppy seed cookies are great and should ship lovely.
if you are looking for a grab and go, then i think mini muffins is great...if you are looking to serve something, i'd recommend an egg dish...even a simple one like frittata that you can cut in...
