Tried and true empandas please

I have made them before and have searched internet for other varieties. But you folks are such great cooks I wanted to ask if you could post T&T empenadas you would recommend. I am taking a tray of tapas to my neighbors' graduation party. Gal is going into Peace Corps and international students from Vietnam and Argentina will be there so the Mom said they are doing international theme.
