My SIL just returned from Wisconsin bearing gifts of cheese and the worlds most amazing Cashew Brittle. it is not like typical nut brittles. It is creamy, golden in color; only contains butter, nuts and sugar; has to be refrigerated; and is not airy like most brittles but dense and thick. It's amazing. Anyone have a recipe that might be able to duplicate it? I have searched the internet but all the recipes are for regular cashew brittle and this is NOT regular! Is this ringing any bells with anyone's recipe collection? TIA!
