    Dessert Filling for Tortilla Rollups?

    Does anyone have a dessert flavored filling for a tortilla rollup? I was trying to figure out how to make something with like the apple cinnamon flavor, but any ideas are welcome!!!!

    I've seen a recipe that mixes cinnamon and sugar (or substitute), spray a FF flour tortilla on both sides with cooking spray and then put in a skillet for a couple minutes and then roll up with cream cheese and fruit. I've never made it but it sounds good!!

    I have a cookbook called Wraps that has several dessert wrap recipes in it. I've made a few of them, including the Apple Wrapover I'm posting below. I also have made the Rocky Road and Abba Zabba wraps, and there are other recipes for Banana Betty, Ice Cream Wrapwich, Nectar Snap, and Plum Decadent. I can post any you're interested in!

    Apple Wrapover

    1/4 cup maple syrup
    2 Tbsp dark rum
    2 Tbsp butter
    1 tsp lemon juice
    1 tsp cinnamon
    pinch Kosher salt
    4 cups peeled, cored, and diced apples
    1/3 cup creme fraiche
    Four 8-inch flour tortillas

    Combine syrup, rum, butter, lemon juice, cinnamon, and salt in a large nonstick skillet. Heat over high heat until mixture begins to bubble. Add apples and cook until tender, about 10 minutes. Add creme fraiche and cook until liquid is thick, about 2 minutes. Divide filling among tortillas and wrap.

    For a baked version: Preheat oven to 375F. Line a baking sheet with foil and place wraps seam side down on sheet. Brush with 1 Tbsp melted butter and sprinkle with 2 tsp sugar. Bake until crispy, about 30 minutes. Be certain there are no holes or tears in the tortilla before baking or all the juices will escape.

    Serves 4

    I tend to smear mine with PB/Nutella and wrap a banana in it.

    I have it for breakfast with PB all the time! Especially with a WW tortilla, it's actually a good diet bet - protein, carbs, fiber and fruit. The nutella version is my PMS breakfast. With nutella it reminds me of the crepes in Paris.

    Just like crepes, any fruit would work out. I cook mine for about 5 minutes with some sugar so it gets soft and sweet, and then I just scoop it in. Had some for breakfast the other day in fact. Works with fresh or frozen fruit, since it heats up.

    This is just off the top of my head:

    For a simple take on it, I'd spread with cream cheese and jam and roll up and slice.

    For more elaborate, I'd beat the cream cheese with flavorings (right now I am thinking maple syrup and walnuts, maybe even shredded apple) and then roll and bake.

    This is a recipe I created years and years ago.

    Apple Burrito

    1 pkg. flour tortillas
    1 can apple pie filling
    1 t. cinnamon
    1 T sugar
    Oil
    vanilla ice cream
    Brown sugar-Brandy Sauce:
    1/2 cup brown sugar
    1/2 cup water
    pinch salt
    1/2 t. cornstarch
    2 oz. brandy

    Combine apple pie filling with cinnamon and sugar.
    Place 1/2 cup in flour tortilla.
    Wet edges and roll up.
    Heat oil in deep pan to 350.
    Fry each burrito until brown.
    Place on absorbant paper towel and drain well.
    Keep warm.
    Serve topped with brown sugar-brandy sauce and scoop of ice cream.
    Sauce:
    Mix brown sugar, water and salt.
    Bring to boil and simmer 3-4 min.
    Mix cornstarch with 2 T water and add to mixture.
    Cook until it thickens.
    Remove from heat and add liquor to taste.

    Apple Enchiladas

    "This is a DELICIOUS apple dessert - serve it up right from the oven with vanilla ice cream - a sure hit with family and friends!"

    Original recipe yield: 6 enchiladas.
    Prep Time:
    10 Minutes
    Cook Time:
    30 Minutes
    Ready In:
    1 Hour
    Servings:
    6 (change)

    INGREDIENTS:
    1 (21 ounce) can apple pie filling
    6 (8 inch) flour tortillas
    1 teaspoon ground cinnamon
    1/2 cup butter
    1/2 cup white sugar
    1/2 cup brown sugar
    1/2 cup water

    DIRECTIONS:
    Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
    Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla. Sprinkle with cinnamon; roll up, tucking in edges; and place seam side down in prepared dish.
    In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let stand 30 minutes.
    Bake in preheated oven 20 minutes, or until golden.
