    Yet Another Sugared Cranberries Question

    I have just made the sugared cranberries, following directions exactly and in spite of that a lot of the cranberries popped when added. Am I going to have to do them over or what exactly does that popping do???

    I always have a few of them pop. I just sugar and eat them anyway -- they aren't quite as pretty, but they taste fine.

    If they popped then your sugar liquid was too hot. Let it cool a bit longer and it will work better. Depending on what you're doing with them I'd think about redoing - gifts, certainly. For myself... I'd sugar and eat them.

    For what its worth, you can reuse the simple syrup at least 1 time beyond the initial batch of cranberries and it will still work, so making the sugar solution and letting it cool is no big deal. Just keep setting them in a warm place overnight (e.g. top of fridge, back of stove, etc).
