    Chicken thighs - need fast, possibly PC recipe, please

    I have skinless bone-in chicken thighs to use tonight, and I need a good recipe for either a pressure cooker or dutch oven, please. Pressure cooker would be my preference, because we have a music lesson right between now and dinnertime.

    We like all sorts of flavors, and my pantry is pretty well-stocked -we just can't use nuts.

    Thanks for any suggestions.

    Oh, pressure cooker. I was sitting here trying to figure out how a recipe for chicken thighs needed to be politically correct.

    Ha! I thought the same thing!

    I typed that PC phrase, and immediately thought that it would be interesting to see if anyone had silly politically correct ideas for my chicken thighs!

    Thanks for checking your pc cookbook - mine has only a few recipes for thighs, and I was hoping for something new and a bit simpler than the ones I've done.

    I was sitting here wondering how you could mean politically correct or pampered chef. Pressure cooker never crossed my mind. Sorry, I've never used one so I haven't a clue!

    Curried Coconut, Chicken, and Sweet Potato Soup

    Recipe By :Pressure Perfect - Lorna Sass
    Serving Size : 6 Preparation Time :0:00
    Categories : Poultry Soups

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 cups chicken broth
    13 1/2 ounces light coconut milk
    2 tablespoons curry powder -- more if desired
    1 1/2 pounds chicken thighs -- bone-in
    1 1/2 pounds sweet potatoes -- peeled and cut in 1/2" cubes
    2 scallions -- thinly sliced
    1/2 cup peas, frozen
    3 tablespoons cilantro
    salt
    3 tablespoons lime juice -- freshly squeezed

    In a 6-quart or larger cooker, blend the broth, coconut milk, and curry powder. Taste and add more curry, if needed, so the broth has a distrince curry taste. Add the chicken, sweet potatoes, and white parts of the scallions.

    Lock the lid in place. Over high heat bring to high pressure. Reduce the heat just enough to maintain high pressure and cook for 7 minutes (breasts) or 8 minutes (thighs). Turn off the heat. Allow the pressure to come down naturally for 4 minutes, then quick-release any remeining pressure. Remove the lid, tilting it away from you to allow steam to escape.

    Transfer the chicken to a cutting board. When cool enough to handle, shred or chop the meat.

    Stir in the scallion greens, peas, cilanto, shredded chicken, and salt to taste. Bring to a simmer and cook until peas are tender, about 1 minutes. Stir in enough of the lime juice to give the soup a distince citrus edge. Ladle into soup bowls.

    Not pressure cooker, but fast and good. Not spicy as in hot, but as in lots of spices

    Spicy Honey-Brushed Chicken Thighs

    2 teaspoons garlic powder
    2 teaspoons chili powder
    1 teaspoon salt
    1 teaspoon ground cumin
    1 teaspoon paprika
    1/2 teaspoon ground red pepper
    8 skinless, boneless chicken thighs
    Cooking spray
    6 tablespoons honey
    2 teaspoons cider vinegar
    Preheat broiler. Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side. Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

    Yield
    4 servings (serving size: 2 chicken thighs)

    We've had the spicy honey brushed chicken thighs a few times. Loved them the first, not so much the second. I'm going to seriously assume that I messed something up the second time-it was a rough day and I was very angry at $15 in berries going bad overnight.

    It is very easy, and while not PC, I'd guess it's fast enough that it wouldn't matter. I made the rub while the grill heated (or a grill pan or broiler for you) and then the sauce came together quickly while the thighs were cooking. I think it was in one of the 20 minute meal sections of the magazine.

    Thanks for the ideas!

    I appreciate the recipes...I hope my family likes the chicken thighs. It's not on our regular rotation, but they looked good, and the price was right!
