    My beans split during soaking!

    I soaked some beans to make a Tuscan Bean Stew (CI Mar/Apr 08) and they split open and most of the skins are coming off. Can I still use them? They are probably really old - but are they edible?

    Should I take off the skins since they are coming off anyway? Where's the fiber anyway - skin and bean, or just skin?

    Fiber is throughout the bean and it has soluble and insoluble.
    Insoluble is mostly in the skin and the soluble within the bean, but am not sure it is cut-dried that there isn't a little of each in the other places either.

    I've removed the skin if it is obviously there (garbanzos are notorious), but i don't go out of my way, especially if i am adding it stews and such.
    A clearer/thinner soup, I may remove them, simply for looks.
