    Question What is tasso?

    I am looking at a recipe that calls for tasso. What is it? It says that smoked pork chops can be substituted.

    I believe it is ham (or so I always thought). I guess that is why smoked pork chops can be substituted.

    You're right funnybone. I guess I should have looked before I leaped. I found this at switcheroo. Some others might be interested.

    .... tasso = tasso ham Notes: This is a heavily smoked ham with a spicy, peppery rind. It's often used in Cajun dishes. Substitutes: smoked ham OR Canadian bacon Virginia ham See country ham.
