    Thumbs up New salmon recipe and couscous recipe

    I made these two dishes tonight for dinner. Both were terrific. Taking advantage of the plethora of fresh herbs. I stir fried some fresh Hadley asparagus with salmon and poured sauce over both fish and asparagus. I cooked salmon in a Calphalon frying pan and used domed lid for old wok. It did indeed get both grill marks and moistness of steaming. Cool.

    couscous with herbs and lemon

    Amount Measure Ingredient -- Preparation Method

    1 medium onion, -- finely chopped
    2 tablespoons extra-virgin olive oil
    1 clove, garlic -- minced
    3/4 cup water
    1 1/4 cups low-sodium chicken broth (10 fl oz)
    1 (10-oz) box couscous (1 1/2 cups)
    1/2 cup finely chopped fresh parsley
    1/2 cup finely chopped fresh basil
    1/3 cup finely chopped fresh mint
    1 tablespoon Fresh Lemon Juice -- or to taste

    Cook onion in 1 tablespoon oil in a 2- to 3-quart heavy saucepan over moderate heat, stirring occasionally, until golden, about 3 minutes. Add garlic and cook, stirring, 30 seconds. Add water and broth and bring to a boil.

    Stir in couscous, then cover and remove from heat. Let couscous stand, covered, 5 minutes, then fluff with a fork and stir in herbs, lemon juice, remaining tablespoon oil, and salt and pepper to taste

    Grilled Salmon with Garlic, Lemon, and Basil

    Amount Measure Ingredient -- Preparation Method

    Sauce:
    2 tablespoons chopped fresh basil
    2 tablespoons fresh lemon juice
    1 tablespoon extra virgin olive oil
    1/2 teaspoon grated lemon rind
    2 Cloves Garlic -- minced
    Salmon:
    Cooking spray
    4 (6-ounce salmon fillets
    1/2 teaspoon kosher salt
    1/4 teaspoon freshly ground black pepper

    To prepare sauce, combine first 5 ingredients in a small bowl; set aside.

    To prepare fish, heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Sprinkle fish evenly with salt and pepper; add fish to pan. Cover and grill 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with sauce.


    Yield: 4 servings (serving size: 1 fillet and about 1 tablespoon sauce

    NOTES : We found that fish cooks best on a nonstick grill pan with a dome-shaped lid, so the fish steams while it gets great grill marks. Serve with a tossed green salad and couscous.
