    Chocolate Sandwiches with Marshmallow Filling - CL 7/08

    I made these and absolutely loved them! I had a slight mishap in trying to eyeball the filling without using a candy thermometer. I ended up with goop, but used some of the cookies to make ice cream sandwiches. After buying a candy thermometer, these turned out well. Definitely needed to mix mine for a lot longer than the recipe calls for before the filling was thick enough. Best of all, these freeze well!

    I LOVE the homemade marshmallow recipe idea for the filling! The traditional recipe had marshmallow, shortening and tons of powdered sugar (at least the one I grew up on).

    I had changed to a milk/flour filling (which reminded me of a Devil Dog/Yodels filling) but the high % of shortening/butter gave the filling body - since I didn't use shortening, all butter was, well, too "buttery"!
    I will definitely try this recipe using healthier syrups. Quite adaptable I think!

    I love the ice cream sandwich idea! I always buy the Skinny Cow cookies and cream ice cream sandwiches, now I can make them myself. Thanks for this review. I checked out your blog to see the pictures, it is beautifully done! Keep up the good work!

    I used to LOVE whoopie pies! Haven't made them in many years cuz of all the shortning, yuck! Your pictures have definantly inspired me to give these a try next family function! Great job!

    Agreed. I was very happy to find a version of these that didn't contain shortening. Though still high in sugar, they're really not that bad for you!

    Angelsfan, its definitely a much cheaper alternative to the store bought Skinny Cows! The other day they were $6 at the grocery

    Today I found the time to attempt this treat. I made the cookie part of the sandwich, but not the filling. I filled mine with reduced fat cookie dough ice cream. I just HAD to sample one, for my blogs sake of course, before dinner. These turned out awesome!! Thanks for recommending the recipe sharsd!
