    ISO: Ideas to use up a BIG jar of apple sauce

    Going through my pantry the other day, I found a mega-jar of apple sauce that is approaching its "best by" date - I know I have some leeway with that, but I want to start thinking about ways to use it up.

    So, any great recipes that call for apple sauce? I know this isn't really the right time of year for that. And, to make things even more complicated, I'd like to limit the amount of baking I do -- it's too hot to turn on the oven without cranking up the A/C, and we're trying to save $$$ by using the A/C as little as possible this summer. So if there's something other than muffins or cakes, that would be much appreciated!

    If you to this link , there are a lot of recipes using applesauce, and probably half of them wouldn't require use of the oven. If you're getting the heat and humidity that we are, this will definitely not be a weekend to bake!

    With pork chops (sauteed or grilled), I like to serve heated applesauce and greens.

    This recipe using applesauce with oatmeal is very good.

    California Breakfast Pudding

    1 1/2 cups water
    3/4 cup oats (quick or old fashioned), uncooked
    1/4 cup nonfat dry milk
    1/4 cup chopped, pitted dates
    2/3 cup applesauce
    1/2 cup low-fat lemon-flavored yogurt
    1 small banana, sliced
    3 tablespoons sliced almonds
    Orange slilces, optional

    In large saucepan, combine water, oats, nonfat dry milk and dates.

    Bring to a boil; reduce heat slightly, continuing to boil. Cook 1 minute for quick-cooking oats; 4 minutes for old-fashioned oats, stirring occasionally. Remove from heat.

    Add applesauce and yogurt to oatmeal, mixing until smooth. Gently stir in oranges and banana; reheat if necessary and top with almonds. Serve with orange slices if desired.

    Makes 4 servings.

    I use applesauce to mix with cottage cheese or plain yogurt as a snack sometimes. I also like it just plain or with cinnamon.

    I don't have any specific recipes on hand at the moment but I know I've used drained applesauce in baked goods before and it was great.

    Thanks for all the suggestions! In the spirit of the recent "Waste Not Want Not" thread, I'm determined not to let this jar go to waste! (Normally, I can put a container of apple sauce in DS's lunchbox just about every day and he's happy, but this time of year, when there are so many delicious, seasonal fruits available, I hate to be giving him applesauce when he could be having fresh peaches or nectarines or whatever .... )

    Kari, that Mott's site is great -- it never occurred to me to use applesauce in a smoothie (just a failure of imagination, I guess), but that's a great idea.

    Here's a smoothie from the Mott's site I made for DS's breakfast this morning -- very yummy (also helped that I have about a zillion frozen bananas in the freezer):

    Apple-Banana Smoothie

    2 bananas, frozen (peel before freezing)
    1/2 cup buttermilk
    1 cup apple sauce

    Puree in blender and pour into chilled mugs.

    Makes two 8-oz. servings.

    Nutrition Information Per Serving:

    * 127 calories;
    * 0.8 g fat;
    * 0.4 mg sat fat;
    * 1 mg cholesterol;
    * 33 mg sodium;
    * 31 g carbohydrates;
    * 3 g fiber;
    * 2 g protein;

    I know you don't want to bake, but I'm going to throw this out there in the event we have a, uh, cold snap.

    These are EXCELLENT...especially with cream cheese frosting!

    Applesauce Spice Cupcakes

    1/3 cup butter or margarine, softened
    3/4 cup sugar
    2 eggs
    1 teaspoon vanilla extract
    1 1/3 cups all purpose flour
    1 teaspoon baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/8 tsp ground cloves
    3/4 cup applesauce

    Cream butter and sugar, add eggs, vanilla, mix well. Combine dry ingredients add to creamed mixture alternately with the applesauce. fill greased or paper lined cups 2/3 full, bake at 350 for 25 min or until they test done. Cool for 10 min before removing to a wire rack. Frost cooled cupcakes

    Yield: 1 dozen

    The original recipe had real whipped cream, butter and sugar and I lightened it. It is so pretty when done in a glass bowl and has remained one of my sons' favorite desserts over the years.

    Danish Apple Cake
    List of Ingredients
    1 cup Graham cracker crumbs
    ¼ tsp ground cardamon
    ½ tsp. cinnamon
    1/4 tsp. nutmeg
    2 ½ cups applesauce
    1 /2 tub Lite Cool Whip
    12 Maraschino cherries

    Recipe
    1. Crush Graham cracker
    2. Slice cherries in half.
    3. Place 4 cherry halves around outside of bowl.
    4. Mix applesauce and spices together in separate bowl.
    5. Spread applesauce on top of crackers. Place 4 cherry halves around edge.
    6. Top with Cool Whip. Decorate with remaining cherries.

    Chocolate Applesauce Cake

    2/3 cup raisins
    1 1/2 cups all-purpose flour
    2 teaspoons baking soda
    1/4 teaspoon salt
    2 teaspoons cinnamon
    1/4 teaspoon nutmeg
    5 tablespoons cocoa
    3/4 cup butter
    1 1/2 cups sugar
    3 large eggs
    2 cups applesauce
    1/2 cup walnuts -- chopped
    icing sugar

    Preheat oven to 350º F. Grease a 10-inch tube pan.

    Cover raisins with boiling water. Let stand for 5 minutes and drain.

    Combine flour, baking soda, salt, cinnamon, nutmeg and cocoa.

    In a large bowl, cream butter and sugar and beat well. Add eggs, one at a time, beating thoroughly after each addition.

    Add dry ingredients, alternately with applesauce, ending with dry ingredients.

    Stir in raisins and nuts.

    Turn into prepared pan and bake 1 hour.

    Cool in pan. Remove cake and when completely cooled, sprinkle with icing sugar.

    Whoops! I noticed you said something other than muffins and cakes.

    How about a pork roast?

    4 pounds pork loin roast (4-6 pounds)
    1/3 cup Mott's apple sauce
    1/3 cup Grandma's molasses
    1/4 teaspoon ginger
    1 clove garlic -- crushed

    - Have meat retailer loosen chine (back) bone.
    - Place roast fat side up on rack in open roasting pan.
    - Insert meat thermometer with bulb in thickest part not touching bone.
    - Roast in 325º F oven 2 to 2 1/2 hours or until meat thermometer registers 170º F.
    - In saucepan, combine apple sauce, molasses, ginger and garlic over medium heat.
    - Brush pork with glaze every 10 minutes during last 1/2 hour of cooking.

    If you're getting close to when it needs to be used, maybe you could take out some and pop it in the freezer until the weather cools off a bit and you want to do some baking?

    what do you do with the cherries OUTSIDE the bowl??
