    8 egg whites.... dinner?

    I am making Giada's Tiramisu and the chocolate zabaglione part of the recipe requires 8 egg yolks! Wow!

    The Tiramisu is for a party tomorrow night but I need to come up with a recipe for dinner tonight. Anyone have any fun ideas on how to use the 8 egg whites?

    The first thing that comes to mind is a quiche or a frittata... but will whites only work?

    Egg whites should work fine. There is this recipe over at Epicurious has 6 egg whites but also 3 more eggs, if that's a possibility for you.

    I use all whites when I make Bittman's Italian-Style Vegetable Pancakes -- 2 whites for every egg it calls for. You can use just about any vegetable, really, including winter squashes. It's hearty enough to serve as a main dish.

    Egg whites also freeze beautifully.

    How about the cookies in the December issue? Many call for egg whites instead of whole eggs.

    I cant think of anything at the moment but that is weird it takes 8 egg YOLKS. I havent heard of that before i have only heard of egg whites. Well i hope it turned out delicious.

    Just wanted to follow up and thank everyone for the suggestions!

    I ended up making the Vegetable Frittata sneezles posted from Epicurious. I had all the ingrediants on hand so it made the decision easy. My only change was that I used 8 egg whites (instead of six) and only used 2 egg yolks. I could easily see this as an easy week night meal. There is a bit of chopping but comes together really easily.

    Regarding the 8 egg yolks... I hadn't heard of it either. The Tiramisu tasted great but deflated a lot. On a different thread sneezles came to the rescue again and told me that the food network states the tiramisu should sit for 6 hours. In Giada's book Everyday Italian she said it could sit at least 2 hours but up to 1 day (and her recommendation is to make it one day in advance).

    It looked really messy... but at least it tasted good! I'd make it again but only let it sit 6 hours.

    Thanks again everyone. I have the Bittman book and am looking forward to making the vegetable pancakes. I hadn't noticed that recipe in the book. I also need to make a souffle ... which I've never done!
