    October 2010 issue of Eating Well

    I love fall cooking magazines! I got this in the mail about a week ago and, finally, just finished looking through it. I thought it was a great issue - lots of different recipes I want to try, mostly from the The Chile That Saved Chimayo and Sprouts to Shout About articles. Has anyone tried any of the recipes from this issue yet?

    I agree that it looks like a great issue. I'll probably try the Apple-Cinnamon Fruit Bars tomorrow and will report back.

    This is the one recipe that I have made so far. I really liked the bars. They had the flavor of little apple pies. I really liked the whole wheat crust.

    No, but I happen to have it open to the Chimayo article--while I am planning things to do on our trip to Santa Fe next week! We will probably visit Chimayo and I will need to bring home some red chile powder for those recipes. I would like to adapt the adovada recipe to something vegetarian.

    Thanks for the review Zackaboo. Did you use chopped nuts or rolled oats for the crust?

    I used chopped pecans.

    Thanks for posting, I actually haven't seen this mag and I saw your posting while I was taking a short study break and told my bf to check it out at the store for me (he just happened to be at Barnes & Noble trying to stay out my hair) he ended up buying it for me and I like it-the bars look great and so do some other recipes! He wants to get the subscription for me now Great post, thanks!

    I made the Barley Hoppin' John from the Healthy in a Hurry. It was excellent!

    We used it as a side dish with grilled chicken and a salad.

    The leftovers will be my breakfast tomorrow, if I can beat DH to it.

    We had the Chicken Mushroom and Wild Rice Casserole...comfort food without the canned soup. Very tasty.

    Last night for dinner I made the Saucy Coconut-Chicken Stir-Fry. We really liked it. I served it with rice noodles as suggested. The only change I made was to add some salt and pepper because I thought it was lacking without those seasonings.

    Thanks for all of the reviews and comments! Sounds like there's quite a few good ones already! I made the Spaghetti Frittata and it was pretty decent.

    I made the Chili Cornbread Casserole over a period of days and it was very well received. I would say it was ecellent and easy. I served the finished product with sour cream, sliced jalapenos and salsa. This will be a "go to" recipe for a crowd.

    Just finished assembling the Broccoli & Beef Hot Dish for our road trip. First time to make cheese sauce using cornstarch but it tasted good. Divided it between 2 8x8 pans and have them in the freezer...will give a review once we've eaten it.

    I made this one, too (with added salt and pepper) and served it over brown rice. Very tasty and easy.

    I also made the Buffalo Chicken Casserole (hot dish?) and that was very good too. It does have a lot of noodles, but I like pasta, so it was good for me. You could easily cut the pasta down. Also, next time, I will add a bit more hot sauce.

    Last night I made Chicken Breasts with Green Chile-Almond Cream Sauce. I was very hopeful about this since DH and I love green chiles, but we found this recipe to be very bland. I checked the recipe a couple of times to make sure I hadn't left anything out. This won't be a repeater for us. I have several other recipes earmarked that I am anxious to try, though.

    We had this last night after arriving in Branson, MO in the RV. It is great! I did leave out the salt listed since the nutr. data says it has over 800 per serving...wasn't missed between the cheese and the Worcestershire sauce. We are having the leftovers for lunch right now. Definitely a repeater.

    Martha, I have the magazine sitting here open to the Barley Hopping John recipe! I'm bookmarking recipes I want to try and the Barley Hopping John was where I stopped last night.

    Glad you pointed this recipe out because I missed it. It looks like something that would be well-recieved in my house.

    I have 2 recipes from this issue in the menu plans for this week. So far I have liked everything that I have tried. Hope the trend continues!

    I went to the Eating Well website and looked at the comments for this recipe. Here is one, Sneezles, that doesn't agree with you.

    "I loved this recipe! I actually put more salt in than directed (a couple teaspoons!), and it tastes soooo good!"

    If I was to make it, and I probably will, I also would leave out the added salt.

    I made the Autumn Chicken Stew and loved it! Nice and simple for when you want something quick and tasty. I think it was the broth that did it for me - chicken broth flavored with apple cider vinegar and rosemary. Yum!

    Glad to hear a favorable review for this! I wanted to try it but wasn't sure how it would turn out. From reading it, I thought it might be too much or too "dip-like." Will have to try this for sure!

    Bummed to hear about this one being bland - it sounded really tasty! Oh well, there's plenty other recipes to explore. Thanks for the review...saved me some time and money!

    I made the Smothered Green Chile Breakfast Burritos and we liked them, but they were more trouble than some breakfast burritos and no better, though I did like the sddition of the green chile sauce. Not sure I would do this one again.

    Just wondering....did you follow the instructions to turn the half cooked frittata onto a plate, spray the pan w/cooking spray and then return frittata to pan uncooked side down? I can never get that maneuver to work for me. So, when I made it last night I ended up finishing it in the oven. I agree it was good (and quite fast, which I really like on a weeknight), but mine was not pretty.

    I decided to try it and, yup - should of went with the oven method. I'd never made one stovetop and now I know why!

    I agree, alot of pasta to the amount of chicken. but no one complained. We added Frank's at the table. Love anything "Buffalo"ed

    I made the Barley Hoppin John last night (ahead since its for dinner tonight)- I was excited because I have been in the mood for black-eyed peas and wasn't sure Dh would go for the barley. He did so I cooked it up last night. I did make one change- I couldn't find quick cooking barley so I used pearled barley- it did take a bit longer to cook. I had such hopes but it tasted bland to me. I'm hoping that it will have improved a bit with an overnight sit but I'm already thinking of how to add some more flavor.
