    ISO Potato Cake Recipe for Leftover Mashed Potatoes

    I have a container of leftover mashedp potatoes (I presume they are still safe to eat) and DH has requested fried potatoe cakes. I have to admit I've never made them so I'm hoping someone can help a gal out. TIA!

    Combine left-over mashed potatoes with an egg, saltine cracker crumbs, s and p to taste, form into patties, and fry in a little oil until brown.

    This was my Mother's recipe and the only one I've ever seen using baking powder as an ingredient.

    Potato Cakes

    2 cups cold mashed potates
    2 tablespoons flour -- more if needed
    1 tablespoon baking powder
    1 egg -- beaten
    melted butter -- as needed

    Mix the baking powder and flour. Combine with the cold mashed potatos.

    Mix in the beaten egg. (Depending the moisture in the mashed potatoes you may need slightly more flour.)

    Fry the potato cakes in butter until they are golden and slightly crispy on both sides.
