This is so addictive! I made 2 1/2 batches around Thanksgiving, and I think I'm going to make a huge batch to give to my son's teachers at Christmas. It's sooo not good for you, but it tastes sooo good! It tastes like buttery caramel popcorn, but the texture is lighter and not as chewy.

Caramel Corn Puffs

2 bags butter flavored Puff Corn (like Chester's) -- (4 1/2 oz.each)
2 sticks real butter (add a couple pinches salt if using unsalted butter, if desired--not really necessary though)
2 cups packed light brown sugar
1/2 cup Karo light corn syrup
2 tsp real vanilla extract (1 to 2 tsp)
1 tsp baking soda (1/2 to 1 tsp)
Preheat oven to 250 degrees.
Pour Puff Corn in very large roasting pan w/deep sides that has been greased.
In large heavy saucepan, melt butter, corn syrup, and brown sugar over med. heat and bring to a boil. Boil for 4-5 minutes stirring most of the time (reduce heat if necessary).
Remove from heat and carefully add vanilla and soda...it will foam up. Stir well to combine.
Pour over corn puffs and stir until well coated.
Bake for about 1 hour, stirring every 10 to 15 minutes.
Pour out onto sheet pans that have been lined w/parchment or greased foil and let cool. Store in airtight container.
NOTES : Puff Corn has the texture of Cheeto's Puffs, but WITHOUT The cheese and tastes like buttered popcorn. The brand at my store is Chester's.
