I would say, pinto beans and guacamole.
Since you are making meat empanadas I would seve them with a green salad, maybe some vegetables steamed on the side. If you wish to make it a fuller meal you can start with a soup, empanadas, salad, vegetable and finish with a flan.
We made this last night for dinner. Note that it takes a bit to chop, cook, blend, fold, and finally bake it. However, it seemsed to go over well.
We served it with the Roasted Yellow pepper sauce (can't remember the exact title, but it was on the page before), and some rice. Salad would have been a nice touch. Finished it off with some Italian Ices....

Thanks for all the suggestions. I think I'm actually going to put this meal off 'till next week. i generally don't like to make two beef meals in one week and I'm really craving some baked penne with meat sauce. So, I'll let you know how it goes next week. Thanks again!
