    Best fillet knife?

    It's all over the map for knives on the internet...

    anyone have a MUST HAVE knife?
    DH just brought home 4 pink salmon on his first time out fishing and we managed filleting with his old, old, old hunting knife....

    happy to hear reviews.

    I like my Chicago cuttlery thin blade for fish - sorta soft iron (high carbon steel) that needs to be retouched regularly and works great if you do that. I just bought dh an obsidian blade but have not tried it yet. I know it will be awesome to start but not sure how long it will keep the edge without rechipping.

    I have a Shun fillet knife that I really like. It is razor sharp and got a great curve to it to make it easy to fillet the fish or remove fat from the chicken or remove meat from the bone. If you are interested, send me a pm. Here is what it looks like:

    I have an old Rapala (a Finnish company that makes fishing lures, too) that I have used forever. It was cheap, stays sharp and is nicely flexible.

    I have seen them at WalMart, but I don't know if the new ones are the same quality as the old ones.
