1 pound mushrooms
3 tablespoons capers
3 garlic cloves, minced
2 tablespoons olive oil
3 tablespoons butter, cut into pieces
2 teaspoons lemon juice
1/4 cup dry white wine - optional
1/2 cup Italian parsley, chopped
Ciabatta bread, for dipping
1. Mix mushrooms, capers, garlic, oil, wine, salt and freshky ground pepper in a shallow baking dish.
2. Dot with butter and bake 450 degrees, 15-20 minutes, stirring occasionally, until mushrooms are tender, golden and bubbling. Stir in lemon juice and parsley. Serve with Ciabatta bread, for dipping.
**The wine is not necessary, but it does add an additional dimension to the dish. Use it, if you have it and want to, then decide.
Oh Lea, that looks amazing. I can almost taste it!
Oh my, those look and sound scrumptious. Wish my husband liked mushrooms
Oh my...did my grocery shopping today...but back to Publix tomorrow...gotta try these!
"I expect to pass through life but once.
If, therefore, there be any kindness I can show or any good thing I can do any fellow being, let me do it now and not defer or neglect it, as I shall not pass this way again."
-William Penn (1644-1718)
